Orange Lemon Chicken with onions, recipe from author @DarylWoodGerber

 I was hungry the other day after crafting a book trailer for GRILLING THE SUBJECT. So I scrounged through my refrigerator hoping to come up with some new "grill" recipe that would satisfy my taste buds. I saw a huge onion looming in my vegetable bin and thought, aha! That's a start. I love grilled onions. I like them on just about anything: pizza, meat, salads.  The trick to making great
grilled onions is to slow cook them! {I show you how below}

But I didn't want to eat onions by themselves. So then I found some chicken and saw a lemon and orange in my fruit bin.

Hm, I thought. What can I construct with this? They're all flavors I love.

The beauty of grilling (indoors or outdoors) is it doesn't have to be complex. Mix and match goes well with grilling. Sort of like putting together a shish kebab. What goes on it is what you have in the kitchen or garden. Tomatoes? Peppers? Onions?

So I allowed myself to think "simple" for this dish, and I threw together all the things that appealed to me: orange, lemon, chicken, and grilled onions. And it turned out amazingly moist and delicious.

Whenever your in doubt of what to eat, let your taste buds (and what's on hand) guide your meal!

ORANGE LEMON CHICKEN WITH ONIONS

2 tablespoons olive oil
½ yellow onion, sliced
1 tablespoon water
2 breasts chicken, with or without skin
1 tablespoon orange juice
1 tablespoon lemon juice
1 teaspoon white pepper
1 teaspoon salt

Heat the oil in a skillet on medium-high. Add the onions. Cover with a lid. Cook about 3 minutes, then reduce heat to simmer, and let the onions cook for another 15 minutes, stirring occasionally. Add the tablespoon of water and turn off the heat.





Set the oven to 300 degrees F. Put the chicken on foil in a flat pan. Top with orange juice and lemon juice. Sprinkle with pepper and salt. Seal the foil.  Bake for 45 minutes.



Pull the chicken out of the oven and open the foil. Turn the heat to broil. Return the pan of chicken to the oven and broil for 5-10 minutes, until lightly golden.


Divide the onions between 2 plates. Set a chicken breast on top of the onions.  Serve with vegetables, if desired.  I sliced zucchini lengthwise and grilled in a tablespoon of butter for about 3 minutes.
