For today's recipe, I thought I'd share one of my favorite cakes, a real comfort food that goes well with tea and a good book. During the Christmas season, I saw the recipe in a Williams Sonoma magazine - I LOVE browsing through cookware magazines - and tweaked it to be gluten-free. It's so moist. Perfect for any time of the year. And, let's face it, any cake made in a bundt pan looks pretty. They're like no-fail cakes, right?
It's spicy. It's dense. It's delicious!
Gingerbread Bundt
Cake
Gluten-free
Ingredients:
Cake:
2 ½ cups GF flour (equal sweet rice flour and tapioca
starch)
2 teaspoons cinnamon
3 teaspoons ginger
1 teaspoon allspice
1 teaspoon ground cloves
1 teaspoon nutmeg
½ teaspoon salt
¼ teaspoon baking soda
2 teaspoons baking powder
½ teaspoon xanthan gum
¾ cup unsalted butter, softened
1 ½ cups brown sugar, packed
2 large eggs
½ cup molasses
1 cup water
Glaze (if desired):
1/3 cup water
1/4 teaspoon cinnamon
1/4 teaspoon ginger
1/4 teaspoon nutmeg
¾ cup granulated sugar
Directions:
Preheat the oven to 350 degrees F. Lightly grease a 10-cup
Bundt pan.
In a medium bowl, whisk together the flour, spices, salt,
baking soda, baking powder and xanthan gum.
Set aside.
In a large mixing bowl, beat together the butter and sugar
until fluffy.
Add the eggs. Remember to scrape the bottom to incorporate.
Add the molasses and stir.
Add the GF flour mixture and the water, alternating between
the two, finishing with the GF flours. Mix until smooth.
Pour the batter into the prepared Bundt pan. If necessary,
smooth the top with a spatula.
Bake the cake for 55-65 minutes, until a toothpick come out
clean.
THE GLAZE: While the cake is baking, making the glaze by
stirring together the water, spices and sugar. Set it aside.
Remove the cake from the oven, cool it in the pan for 20
minutes, then turn it out onto a rack. 10 minutes later, set the cake on your
desired serving dish.
Brush the glaze (if desired) over the cake and then allow the cake to
cool completely before serving.
NOTE: This cake does
not rise a lot. It’s dense and delicious. I made it a second time, when my sister was visiting, and it was delicious without the glaze and served with ice cream.

Love the bundt cake recipe; and the book sounds great! I included a link to my tweet about this post, in this comment. I have never read a self-published book before. EMS591@aol.com https://twitter.com/LizNoVeggieGirl/status/717570193216643072
ReplyDeleteShared on both Facebook and Twitter. I have read self-pubbed books - both in print and ebooks!!
ReplyDeleteThank you for sharing this recipe! Looks scrumptious! I am sure I have read a self published eBook, I couldn't tell you which ones though. I shared on FB and twitter. Thanks for the chance!

ReplyDeleteHappy new book week to you both!
ReplyDeleteI read all kinds of books. I have friends who have self-published some really good books.
The trick is the promotion, isn't it?
Moist, dense gingerbread sounds lovely.

Congratulations on the new release! So good to see you last weekend -- fingers crossed!
ReplyDeleteAnd gingerbread -- wow!
LizNoVeggie, Kelli, Barbara, Dee, and Elaine! So lovely to see you here. Thanks so much for sharing the news. I'm excited to see what you all think of the new book. It'll be an interesting experiment for me, no matter what!
ReplyDelete~Daryl
Lucy, so excited for your new release! I just got my copy! Now for a tasty read!
ReplyDeleteHugs,
~Daryl
Libby, definitely the trick is the promotion. Krista was just asking on a FB site about that and how much is too much and do you all turn off if an author is promoting "buy this book" - I do hope I'm NOT over promoting, but how else can one get the word out?
ReplyDeleteWish me luck.
~Daryl
Leslie, so great to see you, too! You're doing a great job as SinC prez. Way to go!
ReplyDelete~Daryl
I have shared on twitter. Yes, I have read several self-published books, most of them cozies, a couple on kindle, but most print since that is what I prefer.
ReplyDeletesuefarrell.farrell@gmail.com
So glad to see the recipe and since hubby does most of the baking due to me being disabled I love printing it out so we can make when he is home from work. I only have the comp which i am on for limited times most days . Print is the only thing i can read. ptclayton2@aol.com.
ReplyDeleteI have been craving gingerbread, and I think the bundt cake will be perfect. If I don't want to make it gluten-free, do I just substitute regular flour for the rice & tapioca flours and omit the Xantham gum?
ReplyDeleteSue, thanks for sharing! I like print, too!
ReplyDeletePT, I'm a print reader, too. My preference.
Celia, I'm still craving it and I just ate it! Yes, just sub out the flour for regular flour and omit the Xanthin gum in this recipe. It's so easy and delicious.
Hugs to all!
~Daryl

Oh, forgot to say, my first (and only) self-pubbed book was a real printed cookbook. And yes, I read some e-books on my Kindle for PC (laptop) but really prefer the printed words!
ReplyDeleteI have read two self published books, as ebooks, one was yours and one another. I would read another again if that helps to get the book published. I do prefer real paper books, though.

Yes, I've read most of Kathi Daley's books. I understand they are self published. Tweeted giveaway. https://twitter.com/PatWalkerP/status/718153429571469312
ReplyDeleteShared post on Facebook (I'm Michelle Fidler). I've read some self-published books, including one slow cooker mystery by Tim Myers. I just read printed books, no e-books. I have some books by Kathi Daley, too. Some Jane Austen sequel books that I read are self published.

I read self published all the time and love ebooks as well as print. Dianne Harmon and Kathi Daley are both very successful at cozies..
