For today's recipe, I thought I'd share one of my favorite cakes, a real comfort food that goes well with tea and a good book. During the Christmas season, I saw the recipe in a Williams Sonoma magazine - I LOVE browsing through cookware magazines - and tweaked it to be gluten-free. It's so moist. Perfect for any time of the year.  And, let's face it, any cake made in a bundt pan looks pretty. They're like no-fail cakes, right?

It's spicy. It's dense. It's delicious!


Gingerbread Bundt Cake
Gluten-free

Ingredients:

Cake:

2 ½ cups GF flour (equal sweet rice flour and tapioca starch)
2 teaspoons cinnamon
3 teaspoons ginger
1 teaspoon allspice
1 teaspoon ground cloves
1 teaspoon nutmeg
½ teaspoon salt
¼ teaspoon baking soda
2 teaspoons baking powder
½ teaspoon xanthan gum
¾ cup unsalted butter, softened
1 ½ cups brown sugar, packed
2 large eggs
½ cup molasses
1 cup water

Glaze (if desired):

1/3 cup water
1/4 teaspoon cinnamon
1/4  teaspoon ginger
1/4 teaspoon nutmeg
¾ cup granulated sugar

Directions:

Preheat the oven to 350 degrees F. Lightly grease a 10-cup Bundt pan.

In a medium bowl, whisk together the flour, spices, salt, baking soda, baking powder and xanthan gum.  Set aside.


In a large mixing bowl, beat together the butter and sugar until fluffy. 





Add the eggs. Remember to scrape the bottom to incorporate. Add the molasses and stir.

Add the GF flour mixture and the water, alternating between the two, finishing with the GF flours. Mix until smooth.

Pour the batter into the prepared Bundt pan. If necessary, smooth the top with a spatula.


Bake the cake for 55-65 minutes, until a toothpick come out clean.

THE GLAZE: While the cake is baking, making the glaze by stirring together the water, spices and sugar. Set it aside.

Remove the cake from the oven, cool it in the pan for 20 minutes, then turn it out onto a rack. 10 minutes later, set the cake on your desired serving dish.



Brush the glaze (if desired) over the cake and then allow the cake to cool completely before serving.




NOTE: This cake does not rise a lot. It’s dense and delicious.  I made it a second time, when my sister was visiting, and it was delicious without the glaze and served with ice cream.

  13. I have shared on twitter. Yes, I have read several self-published books, most of them cozies, a couple on kindle, but most print since that is what I prefer.

  14. So glad to see the recipe and since hubby does most of the baking due to me being disabled I love printing it out so we can make when he is home from work. I only have the comp which i am on for limited times most days . Print is the only thing i can read. ptclayton2@aol.com.

  15. I have been craving gingerbread, and I think the bundt cake will be perfect. If I don't want to make it gluten-free, do I just substitute regular flour for the rice & tapioca flours and omit the Xantham gum?

  21. Oh, forgot to say, my first (and only) self-pubbed book was a real printed cookbook. And yes, I read some e-books on my Kindle for PC (laptop) but really prefer the printed words!

  22. I have read two self published books, as ebooks, one was yours and one another. I would read another again if that helps to get the book published. I do prefer real paper books, though.
