Chocolate Cake in a Mug @PegCochran #Recipe

Merry Christmas!  And Peace on Earth!


One of my favorite Christmas traditions when my girls were little (they are now 31 and 25!) was to snuggle up with them on the couch in the days before the 25th and read The Night Before Christmas and How the Grinch Stole Christmas.  Now I look forward to doing the same thing with my granddaughter.

A very easy and fun treat to make to enjoy while reading Christmas stories is a chocolate cake in a mug.  It takes mere minutes to put together and is such fun.  Depending on the age of your children or grandchildren, they can help out or even make these themselves!

This recipe was on the blog Table for Two and I found the cake to be more moist than other recipes I have tried.  The original recipe calls for 2 tablespoons of sugar which makes a richly chocolate tasting cake.  I'm guessing that for younger palates, you would want to go with 3 tablespoons of sugar.

Ingredients:

1/4 cup flour
2 - 3 TBSP sugar
2 TBSP unsweetened cocoa powder
1/4 tsp. baking powder
1/8 tsp salt (a pinch)
1/4 cup plus 1 TBSP milk
2 TBSP vegetable oil

Using my cheery Christmas red measuring cups!

Add dry ingredients to a bowl and whisk to combine

Add remaining ingredients and combine


Pour batter into a microwave safe mug

Microwave on high for 90 seconds (for an average microwave--yours may require more or less time)

Now curl up on the sofa under your softest throw with your loved ones snuggled close and enjoy some Christmas stories and your cake in a mug!

    I think I'd add a little powdered espresso to give the chocolate a boost.

    2. There was a hint of peppermint where I stuck the candy cane in. I'm thinking chopping up a candy cane and adding it might be a fun touch.
