Merry Christmas! And Peace on Earth!
One of my favorite Christmas traditions when my girls were little (they are now 31 and 25!) was to snuggle up with them on the couch in the days before the 25th and read The Night Before Christmas and How the Grinch Stole Christmas. Now I look forward to doing the same thing with my granddaughter.
A very easy and fun treat to make to enjoy while reading Christmas stories is a chocolate cake in a mug. It takes mere minutes to put together and is such fun. Depending on the age of your children or grandchildren, they can help out or even make these themselves!
This recipe was on the blog Table for Two and I found the cake to be more moist than other recipes I have tried. The original recipe calls for 2 tablespoons of sugar which makes a richly chocolate tasting cake. I'm guessing that for younger palates, you would want to go with 3 tablespoons of sugar.
Ingredients:
1/4 cup flour
2 - 3 TBSP sugar
2 TBSP unsweetened cocoa powder
1/4 tsp. baking powder
1/8 tsp salt (a pinch)
1/4 cup plus 1 TBSP milk
2 TBSP vegetable oil
Using my cheery Christmas red measuring cups!
Add dry ingredients to a bowl and whisk to combine
Add remaining ingredients and combine
Pour batter into a microwave safe mug
Microwave on high for 90 seconds (for an average microwave--yours may require more or less time)
Now curl up on the sofa under your softest throw with your loved ones snuggled close and enjoy some Christmas stories and your cake in a mug!
Merry Christmas!
I have a new Lucille Series book out -- A Room with a Pew. Perfect light, funny reading to take a break from shopping, cooking and wrapping!
When Lucille discovers the body of her cousin Louis in the church parking lot, her first thought is that he may have skipped one service too many, but when the cops shock her with the news that Louis was killed by a professional hit man, she realizes the Almighty had nothing to do with the deed.
Even more shocking is the discovery that the victim, who never had a penny to his name, had socked away a huge wad of cash. As Lucille and her best friend Flo follow the money trail, it leads them from a seedy strip joint to a high-stakes gambling ring and all the way to the mob.
As the thugs close in and threaten to end Lucille's detecting days for good, she's tempted to give in to the most dangerous crooks she's ever faced, but then she remembers she's got a little family thing of her own that means more.
"If you want a very funny murder mystery, then this book is for you. I've never laughed so hard while reading before." --Goodreads, on Unholy Matrimony, Book 2 in the Lucille Mystery Series
Available on Amazon and Barnes & Noble

We ate it all up!
DeleteI wonder if you could double the recipe and make enough for two mugs.

Sandy, I'm sure you could! Just divide evenly between your two microwave safe mugs.
DeleteLike this recipe and the fact that you can make a single serving. Being chocolate helps too. Will give it a try. Can't wait to read the book. Merry Christmas.
ReplyDeleteMerry Christmas to you, too, Dianne!
DeleteI think I'll try this---a big cake just dries out at our house.

It's perfect when you want some cake but don't want a whole one hanging around the house tempting you.
DeleteI can almost taste it!
ReplyDeleteI think I'd add a little powdered espresso to give the chocolate a boost.
The book sounds like great fun.
That would be delicious! I thought of a bit of powdered sugar on top, too, to make it extra pretty.
DeleteOh, what fun -- makes me wish I had a little one around to enjoy this with!
ReplyDeleteThank you for this wonderful recipe. I love Lucille.
ReplyDeleteThanks, Robyn!
DeleteWhat a great recipe and I love the idea of putting a candy cane in it!! Thanks!
ReplyDeleteWhat a fun idea, Peg! I love it for portion control as well as it's yumminess! Nicole :-)
ReplyDeleteIt's excellent for portion control! And easy to make with things you can keep on hand.
DeleteThere was a hint of peppermint where I stuck the candy cane in. I'm thinking chopping up a candy cane and adding it might be a fun touch.
DeleteThe recipe sounds very good and easy! Thanks!
ReplyDeleteElaine, it was so fun to make and only took a few minutes!
