For the Love of Pumpkin


Pumpkin always says fall to me. Now that it's October, we'll be getting ready to carve up these cheerful orbs for Jack O' Lanterns; fold them into pumpkin breads; and whip them into pumpkin pies. 


But pumpkin is a wonderful ingredient for main dishes, too...

    1. Happy pumpkin to you, too, MJ. Counting down the days to the arrival of The Great Pumpkin. (Okay, so I've never actually seen The Great Pumpkin, but Linus and Snoopy have, and I *am* planning to make a quite a few pumpkin pies this year, so...)

  2. Brilliant, as usual.
    I can imagine the pumpkin adds a lovely "creamy" quality. Regular fettuccine Alfredo is too much. It tastes wonderful, but almost makes me gag on the excess of richness.

    1. Libby - I absolutely agree with you on overly-rich butter sauces. A few bites is heaven but too much of a good thing, as they say...isn't. I think our bodies recognize when we overdo it. And I'm happy to report that this sauce goes down blissfully and feels good to eat, as well. Thanks for dropping today, L, it's always a pleasure to see you in our Kitchen!

  3. Using Neufchatel is such a smart way to add the creaminess that we crave. My mom used to serve pasta with garlic in browned butter. Yum! No wonder Fairbanks and Pickford were enamored of the dish! Your version is much healthier, though, and so appropriate for fall.

    1. Thanks, Krista, and your mom's browned butter garlic pasta sounds wonderful. My own mom made something similar but with olive oil. Just a few good ingredients on good quality (esp. fresh) pasta can really be heaven.
