RileyAdamsFoodBlogPostpic_thumb_thumb[3]Some of y’all aren’t experiencing sunny weather where you are…and you’re wondering why on Earth I’m putting up a summertime dessert like Pink Lemonade Pie.

Can you believe it, but it’s 91 degrees here in North Carolina right now? My children have been swimming in outdoor swimming pools without turning blue and it isn’t even Memorial Day yet!

As soon as the weather started turning, I went ahead and grabbed my recipe box. I knew my kids were going to be asking about lemonade pie. I have an old recipe from the summer before I married. That summer I asked for recipes from just about everybody I knew. And if I ate at someone’s house, I asked for the recipe for everything on the menu. I was a recipe-collecting fiend, for sure! And this recipe has stood the test of time really well. Why? Well, you can’t beat a recipe that has just 4 ingredients and takes about 3 minutes to make (plus 2 hours in the freezer).

In fact, I really thought about putting having the title of this post be “The Easiest Pie Ever!” Decided it wasn’t descriptive enough, so I went with “Pink Lemonade Pie.” But this pie is so simple that I just handed off the recipe to my 9 year old little girl and she made it herself. Enjoy! And put those children to work in the kitchen for you this summer. Smile

  1. This looks great! I'm going to give this a try ~ how easy! Thanks for sharing!

  2. Can't wait to do this for the grandkids -- TODAY!
    Thanks so much.

  3. My sister's mother-in-law (also from North Carolina) shared this recipe with her 30 years ago. I often take it to church potlucks so I double it for a 13 x 9 pan to cut into squares. No one realizes how easy this is to make!!

  4. Kathleen--Hope you'll enjoy it!

    Mary--I have a feeling they'll love it!

So Sarah Sew--Wow! I knew it'd been around for a while...didn't know it had been around for *that* long! It sort of tastes like Key Lime Pie--but about a million times easier!

  5. Your 9 year old made it? That's so sweet! Sounds like your summer is off to a wonderful start. I bet other moms will enjoy making this with their kids, too!

    ~ Krista

  6. I can't wait until it's warm enough around here to make this treat. Sounds absolutely wonderful!

  7. Love it! We had this when I was a kid - '70s. We used lime-aid and green food coloring. Yum yum and yum.

    Thanks for posting it.

  8. Elizabeth/Riley - how easy is this! Yum. I remember making all sorts of cream pies when I was a kid and selling them around the neighborhood. This looks refreshing.

  9. Oh My Gosh... All of you (well, half) have books coming out on the 7th!!!

Got to go with my heart and read the BBQ mystery first... then ice cream... then Grace...

    Then take a nap

  10. Krista--Honestly, she made it all by herself! Now I'm looking for other recipes that she could make, solo. She has fun and I have a break!

Julie--Hope it warms up in the Windy City for you soon!

Christi--Oh, that would be really tasty, too! For a Key Lime kind of look and taste.

Avery--Selling them! What a great idea! My daughter was talking about having a lemonade stand, and instead she could just sell lemonade pie. :)

A Year on the Grill--Lots of good reading on the horizon! Ha! Yes, we're sharing a release day. Pretty cool! And a nap sounds good to me, too. :)

  11. You have a hit on your hands with this! Thanks so much.

  12. Elizabeth, I'd buy a slice of your daughter's pie right about now--after last night's hailstorms, with tornadoes nearby, it's warmed up to a sunny 88 degrees today! That pie looks so cool and refreshing!

  13. Riley/Elizabeth - This looks to me like THE perfect end to a Memorial Day BBQ. And with FINGER LICKIN' DEAD coming out in less than two weeks, I've got Memphis BBQ on the brain. Thanks to you (and your daughter) for an easy and delish recipe.

    Eat (pie) with joy,

  14. Lynn--It is SO refreshing that I had 2 slices after lunch today. :) Ha! Hope your weather settles down...this bad weather has GOT to stop.

Cleo--Why it *would* make a nice Mem. Day addition! Hope you're having good weather in NY. :)

  15. Elizabeth/Riley,
We were just invited to a Memorial Day BBQ and I was asked to bring a first response to myself was...ugh dessert??!! Then I read this and immediatley said to myself " done been saved by Elizabeth!!" So...thanks thanks thanks!!!

  16. It's so pretty, too - fluffy and white, a light dessert for the summer. Love it.

  17. I made this for Memorial Day! It is so easy DELICIOUS! I will definitely make it again.

  18. Nanc--Hope everyone enjoyed it and that y'all had a fun get-together. :)

    Wendy--Thanks! :)

Anonymous--I'm so glad it worked out! It's nice to have something super-easy, isn't it?
