Buttermilk Banana Bread

First of all, a huge congratulations to my fellow Mystery Lovers’ Kitchen cooks, Avery Aames and Mary Jane Maffini for their Agatha wins!

It’s been a big week for Avery—we’re also celebrating her new release, LOST AND FONDUE, which just hit the shelves yesterday. Can’t wait to read it!

I know not everyone is a fan of buttermilk, but it’s like summer in a glass to me.

It’s fun to cook with, too. And, since I’ve got buttermilk in my house, I have a feeling I’ll have buttermilk recipes for the next couple of weeks. :)

I absolutely hate throwing food out, especially produce…and especially now that the produce prices have gone so high!

Since I had buttermilk in the house and several bananas that I knew were too speckled for anyone in my family to want to eat, I had the perfect recipe to help me waste not, want not. Quick and easy to whip up, too.

2 beaten eggs
1/2 C cinnamon-flavored applesauce
1/3 C buttermilk
1 t vanilla
3 over-ripe bananas, mashed (makes a little over a cup)
1 C brown sugar
1/2 C white sugar
1 3/4 C all-purpose flour
1 t baking soda
1/2 t salt

Preheat oven to 325 degrees.
Spray loaf pan with cooking spray.
Blend eggs, applesauce, buttermilk, vanilla, and bananas.
Sift dry ingredients together and then mix with the banana and buttermilk mixture.
Pour into loaf pan and cook for about an hour.

  4. I just love a good banna bread recipe. i make mine with buttermilk as well, and always comes out so creamy and delicious. I've tried pineapple, but never applesauce. On my lits to try now

  5. Riley, I add vinegar to my banana bread recipe, so I would imagine that's making my milk "buttermilk" - have to admit, don't think I could drink it, but my mother loved it. Your bread looks tasty, the plate divine!

  6. KEEPER!! Absolute keeper of a recipe. I completely agree with you on trying not to waste food, especially produce. Almost every week, I have a few bananas that turn that sad, funky shade of brown/black, so I'm set. I love the cinnamon applesauce, buttermilk, and white and brown sugar combos in your mix.   8. A Year on the Grill--I'll have to try pineapple with the recipe...sounds good!

    I just popped over to My Year on the Grill and saw the post on Avery and the one for MaryJane's recipe! LOVE the picture of Avery and the interview, and the great review of MJ's book--woot! And I'm so ready for both blue cheese fondue and fudge right now...a funny combination!

    Avery--I bet it is! Ha! I hadn't thought about vinegar and milk mimicking buttermilk, but I'm sure that's exactly what it does. And thanks!

    Cleo--It's perfect with coffee! My family is pretty picky about their bananas, so it's nice to find a good use for the speckled ones. :)

    Mary Jane--Buttermilk is the best, isn't it?

  9. What perfect timing for this recipe, Elizabeth!!! Mr. Nanc is one of those goofballs that looks for the brown speckly icky nanners...inevitably there are a few that get even too gross for him and by then dogs won't eat them so I'm going to make this this weekend!! I admit that I have never tried buttermilk but for the sake of this recipe I'm going to do it ;-)

  10. I have a stockpile of overripe bananas that try to attack me every other time I open the freezer door, so thanks for motivating me to use up some for banana bread, Elizabeth. Love that pretty plate.

    BTW, in case there are others like us who don't drink buttermilk but do cook with it, you can now buy it powdered in a can, just add water & it bakes just fine, so no waste of the normal liquid containers if you don't use much for a recipe very often.

  11. Nanc--Oh my! Mr. Nanc makes life tough by the constant need to consume bananas quickly! I think there's lots of buttermilk banana bread and banana smoothies in your future!

    Lynn--Ha! They get seriously scary-looking in the fridge, don't they? That's when my children get concerned...when they see them in the refrigerator. Wonderful tip about the powered buttermilk!!! I didn't know that such a thing existed!
