Last Bit of Summer—Tomato Pie

It’s hard to believe that summer is over!

It’s so hard to believe that I’m going to pretend it’s not over.

For one thing, it’s still pretty hot here in North Carolina. It’s easy to believe that summer is still in full swing.

And, technically, September 22 is the first day of fall this year. :) But I know we all think fall starts with Labor Day.

So, still in summertime mode, I went to the produce stand—and was shocked and dismayed to see pink tomatoes there already! I guess fall really is here, as much as I don’t want to admit it. If you want that red tomato look for your pie, this recipe works really well with Roma tomatoes, too.

Tomato Pie

4 sliced tomatoes (squeezed gently to remove seeds and juice)
8 chopped fresh basil leaves
1/2 cup chopped green onion
1 9-in. prebaked deep dish pie shell (cooked until golden brown)
3/4 cup grated mozzarella or Monterrey Jack cheese
1 cup grated cheddar
1/4 cup grated Parmesan cheese
3/4 cup mayonnaise

Preheat oven to 350
Cook the pie shell according to package instructions.
Layer the tomato slices, basil, and onion in the prebaked pie shell. Season with salt and pepper, to taste. Combine the cheeses and the mayonnaise and spread the mixture on the top of the tomato layer.

Bake for 30 minutes or until golden brown.

  2. Ya know, I've never been a fan of the thought of tomato pie but after reading the recipe, I think I just might try it. What's not to love, tomatoes, cheese, and mayo. Oh, how about some crumbled bacon?

  3. This sounds so good! Our tomatoes are gone, gone, gone. I bought a couple at the Farmers' Market, but they left a lot to be desired. If I find some good ones, tomato pie will be on the menu.

  4. I woke up to a gray, rainy day this morning. Definitely feels like autumn here in Michigan. This pie would be great for supper, something warm and melty sounds good today!

  5. Tomato pie. Yum. Anything with cheese, of course, wins my heart. :) And yes, summer has flitted by! Welcoming in the cooler weather, the beautiful leaves to come. A step toward holidays.

  6. I've never had a tomato pie but I think I'd like to try one. That looks really good. You are right, it is still very hot here in North Carolina but you can tell fall is almost here. The leaves are changing already and the shadows are falling differently--seems like all of the sudden too. At least the mornings are cool here in Reidsville. Thanks for the recipe.

    Sheila--I was starting to wonder if the leaves were turning because it's so hot and dry, but I think they really ARE starting to turn because it's fall. :)

  9. We still have some great looking garden tomatoes at our local stands and this recipe is perfect. I could not agree more -- while Labor Day has come and gone, fall is still officially a week away. Let's enjoy ever last bit of summer while we can!

  11. Wow! You can find Elizabeth just about anywhere in Blogdom on any given day. I stumbled across this site by accident and there she is. Can't say as I ever eat a red tomatoe pie, or even heard of one, but why not? Hmm ... think I'll mosy on down to the cupcakes below.

  13. Kaye--I *almost* included bacon in this recipe, but then I know I've done bacon EVERY single week lately so I figured I should try to focus on something different. But I *love* bacon!

    Cleo--Wish we did! I'm going to have to see if I can track some down. I did see some Heritage tomatoes at a stand, so may have to pick some of those up.
