always means a couple of things to me: first is Valentine’s Day – whether you
celebrate yourself, a loved one, or a friend, it’s still a day to cherish love
and to share chocolate (or eat it all yourself)! One of my go-to chocolate cake recipes is this Tunnel of Fudge Cake which is featured in my Valentines’ Day-themed cozy mystery, Chocolate
Can Be Deadly, along with other chocolate recipes.
The second is my husband’s birthday which comes the day after Valentine’s Day. Since his birthday is practically intertwined with Valentine’s Day, we forego the commercialization of the holiday and instead focus on what is important to us, like family. Given that we have a special needs granddaughter, we skip eating out (too many crowds and long waits, even with reservations, which doesn’t work well for her), and instead, I cook a dinner and dessert of my husband’s choosing. Lately, his favorite has been these No-Bake Chocolate Cheesecakes in a Jar (many thanks to Korina Moss for introducing us to her delicious recipe!), and he requests these fun dessert jars often.

ANG POMPANO: I don’t make chocolate desserts often, but Annette does and her Surecelle Chocolate Cookies come from a cherished family recipe. “Surecelle” means “little sweets” in the New Haven Italian-American dialect, where they’re especially popular.
I’m obsessed with these. They aren't your traditional Italian bakery cookies, so you likely won't find them in a cookbook, but they are rich, chocolatey, and wonderfully nostalgic. Hints of cinnamon, toasted nuts, and orange peel are what really make them special.
They’re baked in loaves, frosted with melted chocolate once cool, and then sliced into thick cookies. They’re perfect for Valentine’s Day... or for sneaking a few when no one’s looking.
Annette and I are away right now, but I'll try to post the recipe soon. In the meantime, we wish everyone a Happy Valentine’s Day!

PEG COCHRAN: Ah Chocolate. How do I love thee? Let me count the ways...I adore chocolate, especially dark chocolate. Hubby likes milk chocolate and our granddaughter likes white chocolate so we never have to fight over a box of candy! Oddly, I don't care for chocolate ice cream and I hear that's fairly common among chocolate lovers. I'm sure there's a brand out there that does it well but I haven't found it yet. I'm not crazy about chocolate layer cakes but any kind of flourless chocolate cake is right up my alley. And brownies! Especially these Palm Beach Brownies that combine chocolate and mint and these frosted Celebrity Brownies!

DeleteValentine’s Day has and will always be a special day for us. You see my parents met on a blind date and were married 7 days later on Valentine’s Day. They were blessed with just shy of 60 years when my dad went on to his heavenly home to wait until his sweetheart joined him 7 years later.
ReplyDeleteOne of hubby’s favorite chocolate items to request is Chocolate Cream Pie. One I’ve loved since childhood was a Mounds Cake. As of late though, the one chocolate dessert we both love and I’m often asked for the recipe is this one.
German Chocolate Caramel Bars
Ingredient
60 Light Caramels
½ Cup Evaporated milk
½ C. Evaporated milk
1 C. Chopped pecans
1 Box German Chocolate Cake Mix
1 C. Semi-sweet Chocolate Chips
¾ C. margarine, melted
Directions
In a heavy saucepan, combine the caramels and ½ c. evaporated milk. Cook on very low heat, stirring constantly, until the caramels melt. Set aside.
In a large bowl, combine cake mix, butter, ½ c. evaporated milk, and nuts. Press ½ of the dough into a greased and floured 9 x 13 pan. Keep the rest of the dough for topping.
Bake in a 350-degree oven for 8 minutes. Sprinkle chocolate chips over the baked crust. Spread caramel mix over the chocolate chips. Now, crumble the rest of the dough over the caramel layer.
Return to oven. Bake 18-20 minutes. Cool slightly – refrigerate for 30 minutes to set caramel.
Makes 36 bars.

DeleteMy favorite comfort chocolate cake is our grandmother’s Crazy Chocolate Cake, from the war times. Quick and easy and so delicious when you need something sweet. Homemade butter, powdered sugar frosting tops it off beautifully!

When I was a kid some of my favorites that my (chocoholic) Mom made were Devil's Food cake, chocolate cream pie, brownies with pecans, and the Chocolate Ice-Box Cake from the recipe on Nabisco's chocolate wafer packages. A few years ago I found a great recipe on Pinterest for an updated version of Black Forest Cake and it's really delicious. I'm not much of a baker, but my baked favorites are brownies (yes, I usually use a mix as a starter, then add more chips, cream cheese, or peanut butter) and chocolate chip oatmeal cookies. DeleteI love chocolate cake, pie, candy, etc. The only time I like plain chocolate ice cream is soft serve, otherwise it is Rocky Road, Fudge Ripple, and kinds like that. I think maybe Joanne Fluke's Black Forest Brownies are my favorite chocolate dish.

DeleteMy parents’ anniversary was also on Valentine’s Day. It was chosen because the place where they wanted to get married was available. It was long before it became the commercial day it is now.
ReplyDeleteMy mother had a heart shaped mold and two heart shaped cake pans.
I made cakes for their anniversary several times using the pans and also made a Jello mold.
For chocolate desserts: Since he didn’t like nuts, I used to make brownies for my brother and put in raisins which went well with the chocolate. I also like cream cheese brownies although I have never tried making them that way.
My favorites are Black Forest Cake, Sacher Torte, chocolate truffle cake chocolate cream pie and chocolate mousse.
I have never found either a Black Forest Cake or Sacher torte in this country to be as good as the ones I had in either Austria or Switzerland.
Even though the ingredients are the same, the taste is different but I don’t know why,
I had an aunt who was the official chocolate cake baker. Everyone in the family would request her cake for their birthday.
I know she put in sour cream and raisins and she would use one of the large chocolate bars for the frosting. She would put the cake on the oven door and melt the chocolate on top of it.
She never told anyone the recipe.
For the children she would decorate the cake with animal crackers otherwise she would use maraschino cherries and non-pareils around the top and sides.
You're the first person I've heard that puts (or has put) raisins in brownies! My mom used to do that as well, although my preference was including walnuts :)
DeleteI love chocolate. The last few years it has been dark chocolate rather than milk, which just tastes too sweet now. I think a good fudgy brownie is my favorite. Also great is chocolate chip cheesecake.

DeleteOur family favorite is a cola cake with Coke in both the cake and the frosting. Both have mini marshmallows in them also! Boy, is it a rich cake, but so moist and intensely flavorful! I usually make it just for the 4th of July for some reason. Yum! donnascott@pullman.com

DeleteThis may get my banned from the contest and maybe the page lol 😆 but I am not a big chocolate lover. However I do have some good and favorite recipes. My mom's fudge is wonderful. I make it every Christmas to share with my loved ones. I also have a delicious chocolate cream pie recipe. It uses chocolate bars to make a rich, creamy, delectable filling. I haven't made it in years though for some reason. You could easily layer the filling with It's graham cracker crust and whipped topping in jars or fancy wine or martini glasses for Valentine's day.

DeleteOh my, chocolate heaven! I must agree about chocolate ice cream. I think it is the only chocolate anything I really do not care for. Like Leslie K, I am not particularly fond of baking but I do make a pretty wicked fudgy caramel brownie and melt in your mouth fudge. DeleteI'm with Lucy...not really a chocolate lover. I once ate too much of it as a young teen and ended up in the ER for meds and had hives for 5 days all over my body. DeleteAll my friends and relatives know I am the Chocolate Queen. Dark chocolate, in particular, a square of which I have had for breakfast with my coffee almost every morning for nearly 39 years.
ReplyDeleteWhen I got my first microwave in 1976 it came with a great, hardback recipe book that I still use. One of the best recipes is Microwave Brownies, which makes this my go-to quick dish to make for taking a dessert anywhere.
Microwave Brownies
2 squares or envelopes unsweetened chocolate (1 square = 1 ounce)
1/3 cup butter or margarine (I prefer to use butter)
1 cup sugar
2 eggs
1 cup unsifted flour (I use whole wheat most of the time)
¼ teaspoon baking powder
¼ teaspoon salt
½ teaspoon vanilla
½ cup chopped nuts or 1 cup chocolate chips You can also substitute cocoa nibs for the nuts, if allergies are an issue.
1. Combine butter and chocolate in a medium glass bowl.
2. Microwave on 50% power for 1 ½ to 2 minutes or until melted. Stir in sugar; beat in eggs. Stir in remaining ingredients (I prefer to sprinkle the chocolate chips over the top of the batter in the pan). Spread batter in lightly oiled or buttered 2-quart (8" X 8"—9" X 9" works just as well) glass baking dish.
3. Microwave at 40% power for 7 minutes.
4. Microwave at 100% power for 3 to 4 minutes, or until puffed and dry on top. Cool until set; cut into bars.
Makes 24 bars, unless you like bigger pieces!

ReplyDeleteI’m actually not a huge chocolate fan. Not chocolate cake, not chocolate pie, nor pudding or fudge. I don’t even like chocolate chip cookies! And Oreos Blech! I can do a warm brownie, but give me a Blondin every day of the week. On the other hand, I do love (Canadian) Cadbury chocolate and Rheo Thompson mint smoothies are to die for! 🥰
