VMBURNS: I've made Marry Me Chicken in the past, but I found a recipe for Marry Me Chicken Pasta and had to try it. Of course, I made modifications. I like garlic, but garlic doesn't like me. So, I cut the garlic in half. I also increased the Italian seasoning. Personally, I think the recipe needed a slight kick. The next time I make this, I will probably add Cajun seasoning.
Chicken and Pasta
- INGREDIENTS
- 1 lb boneless skinless chicken cut into small pieces
- 1 box penne pasta
- 3 tablespoons butter
- 1 teaspoons garlic, minced
- 3 tablespoons all-purpose flour
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup grated parmesan cheese
- 1 cup sun-dried tomatoes, drained
- 1 teaspoon paprika
- 3 teaspoons dried Italian seasoning
- Salt and pepper, to taste
- Additional parmesan cheese (optional)
- INSTRUCTIONS
- Boil the pasta according to the directions ont he box, when done drain and set aside.
- Season the chicken breast with salt and pepper, and cut into small bite-sized pieces.
- Heat olive oil in a large skillet over medium-high heat and cook the chicken until cooked through (approximately 6-8 minutes). Set aside.
- Melt the butter in the same skillet. Don't bother cleaning the skillet. You want all those delicious bits of chicken in your sauce. Then, add the minced garlic and saute for approximately 30 seconds.
- Make a roux by adding flour to the butter and garlic. Then, SLOWLY whisk in chicken broth, heavy cream, and parmesan cheese. Stir until smooth.
- Add sun dried tomatoes, paprkia, italian seasoning, salt, and pepper, and simmer until the sauce thickens.
- Add the chicken and pasta to the sauce and stir.
- Add extra parmesan and serve.

DeleteValerie! Marry-Me Chicken is one of my fave chicken dishes! My daughter in law introduced this dish to our family for Christmas dinner a couple of years ago, and it is beloved even by the grandkids, so it stuc k! We have made it several times, and have served it to guests who have asked for the recipe! I can't eat onions or garlic, so eliminating the garlic is no problem. ReplyDeleteThis looks amazing! I love sundried tomatoes and the addition to such a creamy pasta dish sounds perfect. We like mini Farfalle (bow tie pasta)... it cooks pretty fast too :)
