Halibut with Lemon-Butter Sauce by Korina Moss


KORINA MOSS: I've been on a fish kick lately, as you can tell by my recent recipes for fish tacos with mango salsa and salmon with BBQ sauce and peaches. This halibut recipe is my favorite because it's light and lemony and goes well with anything. And you know me--it's easy peasy! 



Ingredients: 

Fresh white fish fillet of your choice. I used halibut. If you use frozen fish, make sure it's defrosted completely.

1/2 lemon

2 TBL butter 

olive oil

seasoning of your choice. I used Mrs. Dash onion and herb.

garlic powder 

salt (optional - I didn't use any)


Directions

Heat your pan on medium. 

With paper towels, pat the fish dry on both sides as much as possible. This allows it to get a little brown and not be mushy. It also kind of looks like a mummy, which is fun. 


Generously sprinkle garlic powder, paprika, and seasoning on both sides. 


When your pan is warm, drizzle some olive oil in so your fish won't stick.


Place filet in pan. Cook for 2 minutes. 


While fish is cooking, put butter in small bowl and heat in microwave until it's just melted. 



Once butter is melted, squeeze half a small lemon into the butter and stir until combined.




At the 2-minute mark, pour HALF of the lemon-butter mixture on top of filet. Let cook for 30 seconds more.


Flip fish over. Cook for 2 minutes.


At 2-minute mark, pour the rest of the lemon-butter mixture over the fish and cook for 30 seconds more.

 


If fish is cooked to your satisfaction, remove from pan. Enjoy!

  1. We love fish served just about any way you can fix it. Of course, I was raised with it fried most of the time. Now we enjoy it cooked ways so as not to be so fattening.

    1. Fishsticks was pretty much the only fish I had growing up. Living in New England as an adult, I've come to enjoy real fish.

  5. I love catfish rolled in cornmeal and fried, if someone else does it! Otherwise baked or sauted fish with lemon butter sauce, just like yours.
