VICKI DELANY: Here in winter climates, we’re slowly coming to the end of the cold season, but it will be several months more before lovely fresh local produce is in the fields and the stores. Time to drag out the last of the canned foods and the frozen meals we put up last fall.
I do a small amount of freezing and
canning. I usually make some sort of tomato chutney or chilli sauce, some
pickles. I make soups, mostly tomato or butternut
squash and have a recipe for pasta sauce with peppers and eggplant and tomatoes
that’s a real standby. I freeze whole
tomatoes and they’re great for tossing into a soup or pasta sauce, although
when unfrozen the texture is dreadful. Berries are good to put in the freezer
and enjoy with your cereal in the cold winter months.
Here’s my recipe for the eggplant pasta sauce I make a lot of when tomatoes are in season and enjoy all year.

The pig only took up about half the freezer, and I didn’t believe I’d ever fill it up completely, but it didn’t take too long before I had. Homemade turkey and chicken stock takes up a fair amount of room, not to mention the breast from last Thanksgiving’s free turkey (I made the legs, thighs, and wings into confit, which is long gone). But since I’m too lazy to do “real” canning, it’s also packed with frozen apples and pears, chutney and jam, and blanched green beans (not to mention blocks of butter and yes, Marie Callender’s pot pies from Costco.)

MAYA CORRIGAN: Basil plants thrive in our garden, so every summer we make several batches of basil pesto to freeze in small containers. They don't take up as much room as Leslie's pig, but there are more of them than any other single item in the freezer.
I just counted 19 of those pesto containers in the freezer drawer of our fridge, and that's three months after we made the last batch. Here's the recipe for freezer pesto that we've used for decades.
LESLIE BUDEWITZ: Whoa, Maya! Serious pesto envy here. Basil's a container plant for me, so I usually manage just a few pints for the freezer, but we do love snipping a few leaves for Caprese salads, tomato pie, and other savory treats in season. We had a long, warm fall, and while the basil came inside as protection against chilly nights, it actually thrived and even continued to grow well into December, which is a first.
Like Vicki, I love freezing whole tomatoes. We also grow strawberries and get quite a few bags of sliced berries, 2 cups to a bag, for a burst of summer flavor mid winter. I love small, tender zucchini, but I've been known to let one or two grow a little larger, then grate and freeze it, again in 2 cup portions, for winter cooking. These classic Zucchini Muffins freeze beautifully -- I had one this morning with my cappuccino! (And yes, you can freeze, thaw, and bake with the grated zucchini and freeze the muffins again.) And this Zucchini Butter Pasta is seriously easy and yummy.
I think I just figured out dinner, even if the deck where this photo was taken is now blanketed in snow!

MADDIE DAY: Yes to freezing summer produce to enjoy all winter! I grow blueberries, and it wouldn't be fall without eight to ten quart bags of frozen berries ready to pop into muffins, pancakes, and cakes when it's cold outside. This Blueberry Pound Cake is smooth and delicious.
I also plant several basil seedlings every year and make pesto when they are in full leaf. I still have a half dozen jars in the downstairs freezer. Turkey and chicken stock after boiling down carcasses? Check. A freezer door full of Girl Scout cookies (mostly Thin Mints)? Check. Add the odd quart container full of stew or soup from a big batch ready to pull out for an emergency dinner, and that's my downstairs freezer. Upstairs has meat and butter and frozen peas and nuts and ice cubes and a miscellany of odd bits.

PEG COCHRAN: As a mystery writer, the mention of a chest freezer puts me in mind of something other than frozen food! We have a refrigerator-sized freezer in the garage and it is packed. Sadly, not with home grown produce since we live in a condo. My daughter and granddaughter live with us now and we have a lot of chicken nuggets, pizza bites, mozzarella sticks, etc. in there for my granddaughter. But we also have half a turkey hubby bought when he went to the turkey farm for our Thanksgiving turkey. We tend to eat soup and chili leftovers for lunch, but when we don't they go into the freezer for another time, like this copycat Panera broccoli cheese soup. I also have a ton of over-ripe bananas for making banana bread, muffins, etc. I also buy family packs of chicken breasts and thighs, divide them up and those are in the freezer. Our kitchen freezer has items we want to grab quickly--pancakes or waffles for breakfast, extra butter and of course ice cream!
LUCY BURDETTE: Since we split the year between Connecticut and Key West, I try not to overload either freezer for fear of what would happen in a power outage. Plus, when will I learn that frozen things that don't appeal when we leave town are not going to improve six months later? Right now we have a whole organic turkey because I thought we were hosting Thanksgiving. And we have a duck for Christmas, when it turns out my sister and her hub don't like duck. Those are causing me angst!

too, but not for the same reason. Every Thanksgiving, when turkeys are plentiful
in the stores and at their lowest prices all year, we buy two turkeys. We roast one for Thanksgiving Day and freeze the other for a tasty turkey dinner in the dead
of winter. We invested in a chest freezer (not to hide body parts as Peg joked about,
LOL!) but to freeze things like chicken parts and big box store extras. Marc
and I will buy the price club’s strip steak pack, for example, make two for dinner
tonight and freeze the rest for fajitas and steak salads. I also freeze chicken
breasts, so I can just grab one and make my ONE HOUR CHICKEN SOUP when I’m

We've always had one upright freezer, but shortly after we moved (for the last time) we bought another upright to place beside the first one in the garage. We have always keep a freezer stocked, but we both had gotten irritated that often times to find the exact package we were looking for took what seemed like forever to find. So buying the second one, buying some tubs that exactly fit the shelves and where two could fit to each shelf, we were able to separate and organize the freezer. Here now 8 years later, it was the best decision made ever!
ReplyDeleteEach shelf is designated for a specific item - beef, chicken, etc. Then one tub may be for ground beef and the other steaks. The advantage of the tub is that I can open freezer and grab a tub to take to the kitchen to say pick out the type of steak we want. Then just open freezer and put tub back in.
Not only the the tubs used for meat, but also veggies and fruit that we put up from our garden or those given to us by our Mennonite friends. There are tubs for strawberries that are frozen both whole and mashed with sugar for things like ice cream, blueberries (which I can't seem to get enough of), peaches, green beans, corn on the cob (where bags are stacked vertically so many can fit in the tub) and LOTS of home grown tomatoes (nothing like a fresh tomato taste in the winter).
Then there are store bought things like ice cream and frozen pizza (for those been on the road all day for doctor appointments and just too tired to mess with anything else) that have their own shelf.
There's no problem stocking both freezers. It's kind of like the more closet space you have the more you have to put in them. LOL You must remember we live in a very rural town where things are not always available. An example of this is we love a certain kind of sausage that the slot at the store always is empty. Thankfully, we have built up a relationship with the store manager since moving her and she will order for us. So when we need some, she orders it and we take the whole box and are good for a good while. We are a bit picky on what kinds of meat we want so when we find them on sale be buy up to keep it stocked.
Another problem is one I really don't understand, but when getting older seems you eat less. That means wrapping in smaller packages. Why does it take more space to store the same amount of meat when wrapped in smaller packages?
Another thing we do is freeze small packages of leftovers for hubby's sister that lives in another state. She's now living alone and quotes the saying so many use "I hate to cook for one - it's just not worth the trouble." Since hubby isn't a big fan of eating leftovers, I take any leftovers and create single serving packages, label and freeze them. When we are headed north to visit, we pack them with ice in an ice chest and take them to her. She greatly appreciates them and thanks us often for the meal she just enjoyed and I feel good because my mom's words of "Don't waste food" come to mind.

ReplyDeleteBoth the freezer in the fridge and the upright freezer in my garage are full of meats, fish, always a bag or two of shrimp, usually one precooked for quick meals as well as one uncooked, salmon filets, cod. Like several of you, there are 2 cup bags of grated zucchini, corn cut off the cob (sadly I am out for now), frozen veggies of all sorts, homemade pesto, whole lemons, lemon juice, lemon and orange zest, rhubarb (my favorite!), blueberries, raspberries, strawberries and mango for baking and smoothies, pieces of ginger, butter, jars of soups and sauces for quick meals. Ice packs, nuts, poppy seed, flours and gluten-free baking blend, and a few leftover treats from Christmas baking. I'm sure there's more. I am a sale shopper so I stock up when I can. Sadly, even though I descend from farmers and ranchers, I did not inherit the farmer gene. I cannot seem to grow much that doesn't take care of itself, so basil and rosemary are about the only thing I can manage, but I have family and friends who grow gardens teeming with goodies and they love to share! DeleteEver since we moved up in the mountains, I've had to get creative on a ton of different meals that will last my family for the winter. It can last 4-6 months, depending on the weather but when it snows. I don't like to drive down with my littles since grew up in an area where it never snowed, so I'm not confident in my driving skills. But I am confident in my cooking/baking. We have chickens, so I try to waterglass them so it will last us the whole winter and If I have an overabundance, then I scramble them and toss them in ziplocks for omelets. We also stocked up on some meats that were on sale after the holidays, such as turkeys and hams. Split pea soup and turkey pho is one of my go-tos. I also stock on vegetables and prep them ahead of time so it's easier to utilize in soups or stir-fry, sometimes I use them for fried rice. When fruits are in season, then I save a ton of them so I can try and make my own jam or use them for berry tarts . I absolutely love being in the kitchen, food is my love language and there is always a new and exciting way to use something.

A great reminder about the corn! I used to buy a lot of corn at the farmers market, take it off the cob and freeze it in one-cup bags, but it's been a few years. I'll start up again this summer! Other than the usual (chicken and other meats, vegetables, ice packs, and a couple pints of ice cream, I admit to having lots and lots of cookies in my freezer! DeleteI've been wanting s stand up freezer for eons (tired of things falling out and hitting me on the head!) and finally got one in January. The first thing to go in was the vodka! Then my Father Brown snacks-frozen treats to enjoy while watching the sleuthing priest. I'm just happy that I don't have to worry about freezer space when I see frozen things on sale. There are only 2 of us, but we have a large upright freezer in the garage, plus the freezer half of our large refrigerator. We always seem to be running out of space, so I am under strict orders from my wife (52nd. anniversary today...yipee!!!) not to but anything that has to be kept in the freezer. What I'd like to confess here is that I am an ice cream addict(...usually that is all I eat for dinner), so I have quite a few quarts of wonderful ice creams to select from. ReplyDeleteIn my freezer: leftover roasted turkey legs and wings from Thanksgiving and Christmas, some chicken thighs, 2 small frozen pizzas, and Cool Whip. I have my regular fridge/freezer in the kitchen and an upright freezer on my sun porch. Usually both are full, but finances are really tight so I can't stock them ad I would normally. I would keep the upright freezer stocked with meat and ice cream and the other freezer would be loaded with veggies and other things.

ReplyDeleteAfter reading everyone's comments, I went down to the basement & peeked in my deep freezer. First things I noticed was a corned beef brisket & half a loaf of rye bread from last St Pat's. So in honor of the upcoming holiday let me tell you how to make the best corned beef. It's super simple & uses a crock pot. Put the brisket in the crockpot & pour the spice packet over it. Use two bottles of a dark beer or stout & pour those over it. I used to use bud light but splurge on the ales and stouts. The flavor difference is amazing! Pour the 2 beers in the crockpot & cook on high 4 hrs or low for 8 hrs. Easy peasy!

I make 16 quart batches of everything: tomato sauce (close to a bolognese), chili, and soups (right now Potato Leek, Italian Wedding and Beef and Barley) and tons of stock (chicken and beef). Plus I buy larger cuts of meat, like a whole brisket to make burnt ends or a bone-in pork shoulder to make carnitas, etc. And I have a whole house generator for all the times we lose power here in the snowy northeast. And what do I do while these are cooking? Read my cozy mysteries and feed my soul!

ReplyDeleteI have had two freezers for as long as I can remember the one inside is from ceiling to floor & the one in the garage well it's semi large and across & holds a lot of food having two freezers comes in handy especially when the holidays roll around between keeping steaks, desserts, potatoes in freezer & best part we can get them when we want them don't have to be eaten right away unless power is out for days

OMG, my magic freezer is shelf organized by food category and is the hit of friends who come to visit! There's the Italian shelf, ice cream shelf, the poultry/seafood shelf, bread shelf, dessert shelf,...you get the idea! ReplyDeleteI have a very large upright freezer and I'm almost embarrassed by everything that I have in my freezer. I buy meat in bulk and divide it for use over a couple of months. I also have some frozen entrees (some leftover and some purchased). And usually, I have 2-4 flavors of ice cream.

ReplyDeleteLovely post. And so timely. We try to plan ahead and buy ready made meals. Plus we double or more favored items and freeze in meal size packages. Freeze fruits and veggies in season for use throughout the year. Just split a nice sized ham into five batches for soups, sandwiches and just to eat steaks. Will last us not as long as we planned. It was so good we did not resist the temptation to quickly defrost another bag of meat pieces. And of course. We have our faves in ice cream. Daughter prefers Baskin and robbins pint size, mine is ben and Jerrys. And of course half gal sizes for general bowls with toppings which Sam prefers. And half gals for rootbeer floats. I live in So Cal so we don't have much of a winter and this winter was very mild. Our freezer has a lot of pork in it as we had a pig slaughtered in the Spring that was pretty sizable. We also eat a lot of chicken. Notmuch beef but we would like to get a small freezer to buy a side of beef. There are 7 of us so extras are always good.
