Asian-Style Noodles with Shrimp and Bok Choy from Vicki Delany

As good as takeout from your favourite Vietnamese restaurant.  I’m sure this recipe would work well with chicken or pork, rather than the shrimp.





Noodles with Shrimp and Bok Choy

Ingredients:

8 oz fresh Asian noodles

6 tbsp vegetable oil

1 lb shrimp

6 medium garlic cloves, minced

4 green onions, white parts only, chopped

4 oz mushrooms, sliced

1 cup chicken stock

1 ½ tbsp fish sauce

1 tbsp cornstarch

8 oz baby bok choy, cut into 1 inch pieces

Instructions:

Cook noodles in large pot of boiling water until tender. Drain and rinse. Reserve.

Heat 1 tbsp oil in skillet, add shrimp, sprinkle with salt and pepper and cook until pink. Remove shrimp from skillet.

To same skillet heat 1 tbsp oil, add garlic, green onion whites, and mushrooms.  Cook about 1 minute. Add broth and fish sauce. Bring to a simmer.

In small bowl stir cornstarch with 2 tbsp water. Stir cornstarch mixture to vegetables. Return to simmer and cook until sauce is lightly thickened, about 1 minute.

Add bok choy and shrimp, and cook about another two minutes. Add noodles and toss until combined. Season with salt and pepper.
