As good as takeout from your favourite Vietnamese restaurant. I’m sure this recipe would work well with chicken or pork, rather than the shrimp.
Noodles with Shrimp and Bok Choy
Ingredients:
8 oz fresh Asian noodles
6 tbsp vegetable oil
1 lb shrimp
6 medium garlic cloves, minced
4 green onions, white parts only, chopped
4 oz mushrooms, sliced
1 cup chicken stock
1 ½ tbsp fish sauce
1 tbsp cornstarch
8 oz baby bok choy, cut into 1 inch pieces
Instructions:
Cook noodles in large pot of boiling water
until tender. Drain and rinse. Reserve.
Heat 1 tbsp oil in skillet, add shrimp,
sprinkle with salt and pepper and cook until pink. Remove shrimp from skillet.
To same skillet heat 1 tbsp oil, add
garlic, green onion whites, and mushrooms. Cook about 1 minute. Add broth and fish sauce.
Bring to a simmer.
In small bowl stir cornstarch with 2 tbsp
water. Stir cornstarch mixture to vegetables. Return to simmer and cook until
sauce is lightly thickened, about 1 minute.
Add bok choy and shrimp, and cook about
another two minutes. Add noodles and toss until combined. Season with salt and
pepper.
