Roasted Asparagus #recipe #giveaway @vmburns

 V. M. Burns: Asparagus isn't a vegetable I eat often. However, I was tired of eating the same vegetables and wanted something a bit different. Asparagus came to mind. Most asparagus recipes include garlic. And while I like garlic, it doesn't like me. So, I'm always scaling back on garlic or looking for alternate seasonings that will add flavor. If garlic doesn't bother you, then you can easily add garlic instead of the Italian seasoning. Or, you can add it in addition to the Italian seasoning. I also love lemons and cheese, so anytime I can add more of those, I do. This came out perfect for me. You may want to tweak it a bit for your own tastebuds. Fortunately, it's really easy.


ROASTED ASPARAGUS


Ingredients

  • 1 lb Asparagus
  • 1 Teaspoon Olive Oil
  • 1/2 Teaspoon salt
  • 1/2 Teaspoon Italian seasoning
  • 1/4 Teaspoon pepper
  • 1 lemon
  • 1/4 Cup Grated Parmesan
  • Sprinkle of shredded parmesan cheese



Instructions

  1. Preheat oven to 400 degrees Fahrenheit.
  2. Snap the ends off of the asparagus, drizzle with olive oil, and place on a baking sheet.
  3. Sprinkle salt, pepper, Italian seasoning, and grated parmesan. NOTE: I added a little shredded parmesan just because...cheese.
  4. Bake for 9-12 minutes depending on how much snap you like in your asparagus.

  3. I love asparagus. We don't have it very often, but when we do we just roast in the oven, similar to your recipe. I haven't thought of adding the cheese, though. My husband would love that. Yes. cd0228@aol.com

  4. I like asparagus, but don't have it very often. This recipe sounds straightforward and good, especially the cheese part. It is also timely because asparagus goes on sale at our local supermarket beginning tomorrow. Your e-book giveaway is also timely because I recently finished Bookclubbed to Death. lroth@pcext.com

  5. Thank you for the wonderful recipe. We actually grow asparagus. Hubby loves it. Me not so much. I'm always looking for new ways to serve it thinking I'll hit on the one I'll really like.

    Unfortunately, I don't read ebooks, but I'm dying to read MURDER ON TOUR. Can't wait for the opportunity to read and review it.

  7. Yes to asparagus. I make it all the time. They sell it at Aldi's and it's inexpensive. We've even planted it in our garden, but it only gives us a few stalks at a time. Not enough for a meal.

  14. Love asparagus! It is a standard in our kitchen, whenever I can get it at a good price. I often just roast it with olive oil, salt and pepper. Will have to try adding the cheese because, well cheese!

  16. Yes for asparagus. That recipe looks delicious and really easy. I've never had cheese on asparagus, but it looks good and I love cheese. I have recently been adding Parmesan cheese to a lot of things. This just reminded me to add it to my green bean casserole topping for Easter.
