Teriyaki Chicken in the Slow Cooker from Vicki Delany

As you know, I use my slow cooker a lot. I live alone and I find doing a meal in the slow cooker gives me several other meals to put in the freezer to enjoy later. Most slow cooker recipes are fairly simple – make sauce, cook. I tend to avoid recipes with a lot of prep such as searing the meat before adding to the cooker. This one is  a good example of a suitable recipe. It’s quick to mix the sauce. Add the chicken. Turn it on and walk away.


Teriyaki Chicken in the Slow Cooker

½ cup soy sauce

¼ cup chicken broth

¼ cup brown sugar

3 tbsp. quick-cooking tapioca

3 tbsp. ketchup

2 tbsp. rice vinegar

1 tbsp. chopped peeled fresh ginger

4 cloves garlic, minced

1 tsp pepper

2.2 libs boneless skinless chicken thighs, cut into strips

 

Combine all ingredients except chicken in a bowl.  

Add chicken strips and coat chicken with the sauce

Place in slow cooker, cook on low for 4 hours

  2. Thank you for the recipe! It sounds yummy to me. I love anything teriyaki flavored. I'll be sharing with a friend with the hint to make it when I'm coming up to visit since I have never owned a crock pot. Hint - hint! :)

    Wish there were a way around that much soy sauce. It's so salty (part of why it tastes so good!). I guess reduced sodium soy sauce helps.
    "quick-cooking tapioca" Interesting ingredient. Is this for thickening?
