I just turned in the 8th book in my Cranberry Cove Series--Berried Grievances--and I needed to develop a recipe. In the book, new Sassamanash Farm baker Mick (gorgeous Greek fellow who is Gus Amentas's nephew and bound to break some hearts) comes up with Cranberry Oatmeal Sandwich Cookies so I decided to create my own! (Berried Grievances coming in July. Stay tuned for pub date and cover reveal.) One word of advice--be sure to soften your butter before creaming it with the sugar. I forgot to and the mixer was moaning and groaning at the extra hard work of creaming cold butter.
Cookies
½ cup plus 5 tablespoons softened butter
½ cup brown sugar
¾ cup granulated sugar
2 eggs
1 tsp. vanilla
1 ½ cups flour
1 tsp. baking soda
1 tsp. cinnamon
½ tsp. salt
3 cups of quick or old-fashioned oats
1 cup dried cranberries
Heat oven to 350 degrees.
Cream softened butter and sugar. Add eggs and vanilla and beat.
In a separate bowl, combine dry ingredients: flour, baking soda, cinnamon, salt. Add to butter/sugar/egg mixture and combine.
Add in oats and cranberries and mix well.
Drop tablespoons of dough on an ungreased cookie sheet.
Bake 8 to 15 minutes depending on your oven. Let cool on baking sheet for one minute, transfer to cooling rack to cool completely.
Filling
½ cup softened unsalted butter
1 2/3 cups powdered sugar
½ tsp. vanilla extract
Zest of 1 orange
1 tbl. orange juice (or more as needed)
Beat all the filling ingredients until smooth and spreadable. Add more orange juice or powdered sugar as needed to achieve desired consistency.
Choose cookies of comparable sizes. Spread filling on flat side of one cookie, top with second cookie and press together.
