Curried Chicken Salad from @MaddieDayAuthor #giveaway

MADDIE DAY here, with a tasty summer salad for you. Read down for a giveaway.


This recipe will be in Murder in the Rusty Anchor, which I am polishing now, so I'm testing the dish on all of you! I'm happy to report that Hugh and I both loved it. The book is the sixth Cozy Capers Book Group Mystery and will be out in 2024 sometime.

Chicken Salad

A curried chicken salad is perfect for a summer evening. Tim put it together for a meal with Mac. The capers add a tangy touch.



Ingredients

2 cups cooked chicken, shredded or cubed (I used some from a store-bought rotisserie chicken)

1/2 cup red seedless grapes, halved

1/2 cup pecans

1 tablespoon capers, drained

1/2 cup mayonnaise

1 teaspoon curry powder

Salt

Pepper

 

Directions

Toast pecans in a dry, cast iron skillet (or other dry frying pan) for about ten minutes or until fragrant, shaking frequently. Roughly chop.



Mix mayonnaise and curry powder in bottom of serving bowl. Add other ingredients, plus pecans, and mix thoroughly. Increase mayo if you like and curry powder to taste, and add salt and pepper to taste.

 


Serve over salad greens with a sliced baguette or a side of potato salad.

  2. I have a very easy recipe. I open Costco’s Kirkland canned chicken place into bowl, microwave the 60 second Seeds of Change rice and quinoa packet then add to bowl, add a can of slice mushrooms, mix together and it is a fast and hot meal. Usually when my pantry is running low or I need a quick meal. Very tasty!

I use chunks of cooked chicken breasts in a casserole made with wild rice, sour cream, Duke's mayo, creamed soup, colby cheese, a lot of chopped celery, and topped with French fried onions for the last 15 minutes of baking. It's perfect comfort food; in fact, I'm making it tomorrow for a neighbor who's been in hospital and is coming home.

    I enjoy using canned salmon in salads like this too - especially in the summer time when one hates to heat up the kitchen on these hot and stuffy days.

  6. My favorite chicken is in a salad, of any kind! I’m excited to try your recipe. We also enjoy a simple chicken quesadilla with chicken, cheese and bacon and top with tomatoes and sour cream.

  8. I like to shred leftover chicken breast and stir it up with some barbecue sauce and heat it up in the microwave and put it on a hamburger bun. Nice and easy. ckmbeg (at) gmail (com)

  9. I love a really good chicken salad! Your recipe looks delightful! Did you accidentally leave celery off your ingredient list? I think I see some in your bowl of unmixed ingredients. When I make this recipe, I will add halved green grapes, red onion, and dried cranberries for extra color and texture.

  11. Thank you for your most creative recipes, Maddie! I love curry, and have not had a curry salad in years. I will try this deliciousness and be thinking about your protagonists. My favorite summer salad has to be Caprese Salad - bib lettuce, fresh mozarella, tomato slices and fresh basil with olive oil.   16. Summer is a great time for rotisserie chicken from the grocery store. It works great in a pasta salad with mandarin oranges, green onion, spinach and toasted pecans.     Shred cooked chicken

  19. Thank for sharing this yummy easy chicken salad - another way to use the rotisserie chicken! When we get the Costco rotisserie chicken for dinner (it's such a great buy), and of course we'll have left over. Hubby and I always brainstorm how to use them, like making enchiladas, tacos, taquitoes, lettuce wraps, chicken pot-pies, chow mien, and now chicken salad!

  21. We like to use cooked chicken in a Caesar salad. Another salad we like, although without chicken, is a corn and avocado salad with tomatoes, red onions, jalapeños and red bell peppers.

  22. I love to make chicken salad in the summer months. Usually what ever I have on hand, so it is always different. I love to make chicken salad, which is a lot like making tuna salad. I like making chicken and slicing it so it can be a sandwich or small slices go on top of a salad
