Hello from TINA KASHIAN! I’m sharing an easy and tasty zucchini recipe today and giving away a signed, print copy of the hot-off-the press anthology, MURDER AT SEA, featuring my Kebab Kitchen characters! This recipe is a perfect appetizer or side dish. I found it on Pinterest and will definitely make it again. It’s also convenient to use your air fryer and not turn on the oven on a hot day.
Ingredients:
1 cup zucchini sliced into thin chips
¼ tsp garlic powder
¼ tsp onion powder
¼ tsp salt
½ cup Panko bead crumbs
3 tbsp Parmesan cheese
¼ cup corn starch
1 egg
Directions:
Preheat air fryer to 390 degrees. Cut zucchini into
thin chips. Pat with a paper towel to remove moisture. Combine Panko breadcrumbs,
garlic powder, onion powder, salt and Parmesan cheese. Mix well. In three
medium sized bowls, put corn starch in the first; beaten egg in the second; and
Panko breadcrumb mixture in the third.
Dip zucchini in corn starch, then the beaten egg, and then the Panko breadcrumb mixture. Spray air fryer basket with cooking spray. Place zucchini into the basket.
Cook for 5-6 minutes. Turn zucchini over and cook for an additional 2-3 minutes. Remove when golden brown.
Dip in marinara
sauce. Enjoy!

DeleteOne of my favorite appetizers is Fried Cauliflower. The recipe is simple and the results are yummy. It can also be used as a side dish too.

1 large cauliflower cut into the small flowerets
2 eggs
4 ounces of milk
4 ounces of flour
1 ½ tsp. salt
¼ tsp. pepper
¼ cup parmesan cheese – I love it so I usually double this amount
Instructions
Dip the cauliflower in an egg and milk mixture. Drain some so not dripping. Roll each floweret in the seasoned flour mixture (last four ingredients) Shake off excess and place on wax paper. Deep fry approximately 3 minutes. Drain with the use of a slotted spoon and place on paper towel. Serve hot. We love it just this way, but I put our ranch dressing for dipping that some enjoy.

Yes, I'm sure it can be baked in the oven. I haven't tried it and I assume it's close to the same cooking time. I would also turn it over half way if not air frying.
