Crockpot Chicken Pot Pie #recipe @vmburns #recipe #giveaway

 VMBurns: I love cooking with my crockpot and I love chicken pot pie, but I never made it from scratch because I thought it was complicated. I mean, you have to make the creamy chicken filling and the biscuit topper. That's a lot. Then, I found a recipe (Thisisnotdietfood.com) that was so easy that I had to give it a try. I adapted the recipe a smidge, to suit my personal taste. When I make it again, I will add mushrooms, a poultry seasoning. Still, this was really tasty and I will definitely be making it again and again.

CROCKPOT CHICKEN POT PIE





INGREDIENTS
  • 1 lb boneless, skinless chicken thighs
  • 1 Cup onions, diced
  • 10.5 oz Can Cream of Chicken Soup
  • 10.5 oz Can Cream of Mushroom Soup
  • 1 Package Chicken Gravy Mix
  • 1 Teaspoon Lawry's Season Salt
  • 1 Teaspoon Paprika
  • 1 Teaspoon Pepper
  • 1 Cup Water
  • 1 Package frozen mixed vegetables

  • INSTRUCTIONS
    1. Dice onions and dump into the crock pot.

    2. Season the chicken thighs with salt and pepper to taste and place on top of the diced onions.

    3. Pour the Cream of Chicken, Cream of Mushroom soup, and gravy mix on top of the chicken.

    4. Add water and cook on high for 2 1/2 hours or on low for 4 1/2 hours. The beauty of crockpots is that you can cook slow all day. So, normally, I would just start before work and then come home 8-9 hours later. If that's the case, you may want to add more water.
    5. Remove chicken and cut into bite-sized portions and return to the crockpot and stir. (I forgot to remove the chicken before adding the frozen vegetables, but it worked out just fine).

    6. Add the frozen vegetables to the pot and stir.
    7. Cook for an additional 1-2 hours. 
    8. Place biscuits in the oven and follow directions on the package. Or, if you're feeling energetic, you can make your own biscuits.

    9. Serve in a bowl and top with a biscuit.

    1. Although I’ve never owned a slow-cooker, a very dear friend cooks this when we travel to visit with them. She knows we love lasagna and this recipe means she can fix the cooker and forget it. Since we live in different states, this leaves us more time for catching up and less time in the kitchen. She adds garlic bread and a tossed salad and we are fixed. Although she does partly cook the meat first, maybe this would be considered a part slow-cooker recipe. Maybe you could do that first step in the slow cooker if you wanted. I don’t know.

      She insisted on giving me the recipe because as she says “I need a slow-cooker!” Won’t surprise me to find one with my name on it on our next visit if I haven’t broken down and bought one before. LOL

      Slow-Cooker Lasagna
      Ingredients
      1 pound ground beef
      1 large onion, chopped
      2 garlic cloves, minced
      1 can (29 ounces) tomato sauce
      1 cup water
      1 can (6 ounces) tomato paste
      1 teaspoon salt
      1 teaspoon dried oregano
      1 package (8 ounces) no-cook lasagna noodles
      4 cups shredded part-skim mozzarella cheese
      tap here
      1-1/2 cups 4% cottage cheese
      1/2 cup grated Parmesan cheese
      Directions
      In a skillet, cook beef and onion over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. Stir in the tomato sauce, water, tomato paste, salt and oregano.
      Spread a fourth of the meat sauce in an ungreased 5-qt. slow cooker. Arrange a third of the noodles over sauce (break the noodles to fit if necessary). Combine cheeses; spoon a third of the mixture over noodles. Repeat layers twice. Top with remaining meat sauce.
      Cover and cook on low for 4-5 hours or until noodles are tender.

    6. I love our crockpot we got from when my husbands dad passed it is big a little off on temp but it is great for cooking up a large pot roast or even a large pork roast. In a few days I will be going to Ca to visit my son and I am buying him a crockpot so that I will be able to cook meals in it for him when he gets off his second job peggy clayton ptclayton2@aol.com

    8. I am a chicken pot pie fanatic and this recipe just made that easier for me. I also make chili in my crockpot since it's so easy.
      1 lb ground beef (can also use ground turkey)
      1 packet of McCormick's Mild Chili mix
      1 can of light red kidney beans
      1 can of dark red kidney beans
      Salt and pepper
      I serve it with Kiffy Mix Cornbread (or Krusteaz) on the side. Also freezes really well.
