Pork Roast with Onions made in Slow Cooker by Vicki Delany

 As you know, I love my slow cooker. It’s particularly great when you can get a large piece of meat on sale. Make up a big patch of something like this roast pork and freeze for later meals.



Roast Pork with Onions in Slow Cooker

Ingredients:

¼ cup brown sugar

¼ cup soy sauce

¼ cup white vinegar

2 bay leaves

1 boneless pork shoulder, around 2.5 – 3 lbs

1 tbsp olive oil

2 onions, thinly sliced

2 cloves garlic, chopped

2 tbsp chopped peeled fresh ginger

Instructions:

In the slow cooker, combine brown sugar, soy sauce, vinegar, bay leaves

Add oil to a skillet on medium-high heat and brown roast on all sides

Place in slow cooker

In the same skillet brown onions, garlic, ginger for about 5 minutes.  Spoon over meat in the slow cooker

Cook on low for 6 hours

Great with mashed potatoes and a sauteed green vegetable.
