LESLIE BUDEWITZ: I'm with Cleo on loving ice cream in summer, though we don't often make our own. We do make our own Chocolate Cabernet Sauce, which I shared with readers in Butter Off Dead and on the blog. Super easy, super yummy, and delish all year round. Plus it keeps in the fridge for a weeks, though ours never lasts that long.
Summer is also the perfect time for salads that need nothing except maybe a chunk of bread and a glass of a crisp white wine to make the perfect dinner. Even better if you can make a big bowl of it and enjoy it for dinner a couple of nights and maybe lunch in between. One of our faves is one we call Hail to the Shrimp---it was one of my first posts as a Mystery Lovers' Kitchen guest and the one I shared a few years ago for the blog's 10th anniversary. We've already made it once this summer, and I'm betting it's back on the menu at least a time or two before the weather cools. It's super flexible---use whatever fresh herbs you've got. It's bright and colorful and easy---just right for any summer evening!

LUCY BURDETTE: How I love the vegetables of summer! That's when I make my first-ever recipe on MLK, the leaning tower of eggplant, with fresh eggplant, tomatoes and arugula from the garden or the farmer's market. Or I might make Mark Bittman's tomato rice soup, or how about a tomato cheese pie with a cornmeal crust?

LESLIE KARST: I love outdoor dining--and cooking!--during the summer months. Nothing like firing up the barbecue to grill some sausages, chicken, and summer vegetables, then sitting around the patio with your family and friends sipping wine as you chat and watch the sun sink into the west.
And as Lucy says, the summer veggies! Oh là là! Time for homemade pickles and tomato jam!

MADDIE DAY: Ah, summer, how I love you. When I can wander out to my garden and harvest dinner, I am a happy author - and human being. Sweet corn from the farm store. Freshly picked blueberries from my own bushes. Armfuls of basil. Asian eggplant on the grill, and mostly, sun-warmed tomatoes.
One favorite thing to make is when I have my own eggplant, peppers, basil, and tomatoes is Roasted Ratatouille. If it's too hot to roast indoors, you can grill the eggplant and peppers.
Last year I even my had my own potatoes to serve with the ratatouille. Mmm. Right now my garden tomatoes are small and green, but they'll get there!

PEG COCHRAN/MARGARET LOUDON: I'm old enough to remember when summer meant the arrival of watermelon and corn on the cob because neither was available year round like they are now. We were so excited when they first became available at the local farm stand. I still look forward to both of them! I also love ice cream, but that's a year-round treat. Right now we have locally grown asparagus from Michigan and I could eat that every night! I will also grill anything that doesn't run away and I love making desserts with the luscious berries that become available. I just made this simple strawberry cobbler again and it was the essence of summer.

MAYA CORRIGAN: Living near the Chesapeake Bay, I associate summer with hard shell blue crabs. That's what we'll eat with friends for the July 4th celebration at our house. We won't cook the crabs ourselves, but buy them from the crab truck that parks outside our local supermarket several times during the summer.
For those who don't care to crack the shells and dig out the crab meat, we often serve Chesapeake style shrimp along with the crabs. The crabs and the shrimp are steamed with Old Bay seasoning, a Maryland product. Corn on the cob, coleslaw, and watermelon complete the feast.

VICKI DELANY: For me it's tomatoes, hands down. I am lucky enough to live in farm country and that means tomatoes straight from my neighbouring farm. Since coming to live in Prince Edward County, Ontario, I've come to appreciate the wide variety of heirloom tomatoes that are having a resurgence in popularity. I've posted in the past about Vicki's Veggies (no relation) who specializes in heirloom tomatoes. Her tomatoes tasting day at the beginning of September is a county tradition. summer and the hotter the better. We plan a garden every year and grow Jersey
tomatoes, peppers, eggplant, cucumbers, and herbs. Using fresh ingredients from
my garden to prepare dishes and salads makes me happy. We also have our own grapevine,
and we pick grape leaves to make stuffed grape leaves. We pick the leaves when
they are tender and freeze them in glass jars of brine to have enough to last
all winter. As you can see, the grapevine can take over.
I also use the tomatoes, scallions, and parsley from my garden to make fresh salads. One of my favorites is tabbouleh.

ReplyDeleteBlessed to have a hubby with a green thumb, we have a vegetable garden. There's nothing better than fresh from the garden to the table. With so many daily critter visitors, we have to get our fresh fruit from others while in season. Oh we have lots of fruit, just have never gotten to eat a piece of it yet from the pear trees or blueberry bushes. We did get to enjoy some fresh strawberries until they found out where we had moved them to.
ReplyDeleteEach fruit has it's own season in which we enjoy it. The strawberries were first and we enjoyed them in about every way possible including some amazing homemade strawberry ice cream. The peaches are just starting to come in and we enjoyed the first piece of Peach Delight last night. It has a crust with pecans topped with a cream cheese mixture layer topped with fresh peaches and then a jello layer. Watermelons are next enjoyed with a salt shaker at hand. You can mention fruit without smacking your lips thinking of cobblers like blackberry and pies like fresh peach. Makes my mouth water just thinking about them fresh out of the oven!
As for the veggies, we have been enjoying the early tomatoes and the sweet banana peppers so far. Nothing better than the taste of the first mater of the year. We love the peppers stuffed with pimento cheese and often grow our own pimentos as well. We love the fresh veggies any way we can fix them from raw sliced on a plate, fried, stewed, sautéed or combined into a mixture or casserole of some sort. With fresh veggies abound in the summer, we often have meatless meals just so we can enjoy the veggies more while we have them. Being a good old southern gal, one of the my favorites is fried green tomatoes fixed with a light coating or fried squash with a cornmeal and parmesan cheese coating.

Still my favorites are the local Mangos & watermelons & a big slice of Key Lime pie in the afternoon with an iced latte hits the spot for sure . Sweet tea is also popular here in the South & is especially delicious with our southern style bbq & grilled seafoods & fresh coleslaw on top ...yum , I am getting hungry now .

ReplyDeleteI make some no-churn pink divinity ice cream. It was my mom's favorite flavor until it was discontinued 20+ years ago, so I made up a homemade version for her. I also love making strawberry pie and rhubarb salad, and having fresh garden veggies.

My favorite foods of summer make a very long list, so I will just mention a few. I love watermelon, corn on the cob, ripe summer tomatoes, yellow squash, fresh peaches, shrimp boils, fresh cherries, potato salad, grilled hamburgers and steak, Vidalia onions, and ice cream! I also like to grill or bake sweet onions. Get a square of aluminum foil and place a peeled sweet onion in the middle. Top it with a big pat of butter and sprinkle on your favorite seasonings. (I use Trader Joe's 21 Seasoning Salute that has no salt.) Twist the foil into a bundle at the top so it is all enclosed. Grill or bake until the onion is soft and tender. It is yumminess indeed!.

DeleteNancy and Peg -- Me too! I'll bet that amazingly simple recipe for Vadalia onions would work with olive oil just as well as butter. When I roast carrots with olive oil, the result is wonderfully sweet and delicious. The carrots taste buttery without the butter, not doubt because of the amount of natural sugar in the carrots. Because Vidalia's are so sweet, I'll bet olive oil would work for them, too!

She'd get my dad to fire it up and then he was told to "relax" while she cooked. Her grilled asparagus was the first time I'd tried the vegetable and I loved how the light char brought out the nutty hints in the asparagus. ReplyDeleteOh so many vegetables and fruits, it’s hard to choose favorites! Tomatoes are the most longed for, as nothing in the markets come close to summer, garden tomatoes. Our earliest veggies are pea pods and asparagus, great for stir fry bowls and frittatas. Green beans, squashes, peppers, scallions, garlic, mint, parsley and grape leaves create wonderful Mediterranean delights and there are strawberry, blueberry and raspberry delicacies for summer desserts. Our many apple trees provide crunchy treats for cooler, autumn days. It’s a ton of work in our 10 bed organic gardens but oh the delights to share with family and friends.

ReplyDeleteBiting into a fully ripened, still warm from the sun peach, its juice running down my chin. Oh lord. Rushing into the kitchen with ears of corn picked just moments before and dropping them into an already boiling pot of water. So sweet it's like eating candy. Heirloom Brandywine and Black Krim tomatoes. Shiver! Vine ripened homegrown raspberries. The difference between homegrown and store bought raspberries is akin to the tomato experience. There's no comparison! I miss my garden. Sigh.

ReplyDeleteI love food on the lighter side when summer hits, and you can't go wrong with all types of salads. A basic chicken salad, tuna salad, potato salad, or pasta salad! I also love BBQs and get togethers with the family, so hamburgers and hotdogs are a must! Throw in some homemade mac-n-cheese, fruit combinations (strawberries with a cream cheese dip,) and some yummy desserts...and you have one happy gathering! ReplyDeleteI enjoy fresh lettuce for salads and strawberries. My kids really enjoy strawberries and fresh watermelon during the summer months. They can be picky eaters but watermelon is something they can all agree on.
