Curried Grilled Shrimp Recipe by Mia P. Manansala @MPMtheWriter

I know I promised more recipes that use the delicious arnibal (brown sugar syrup) from my iced brown sugar oat milk shaken espresso recipe, but my new grill pan just arrived and I had to test it out!

Testing this curried grilled shrimp recipe on my new grill pan!

It’s going to be in the 90s (with highs of 100) all week in Chicago, so I was looking for a light, quick lunch that still packed big flavors. I’ve had this Sri Lankan Grilled Shrimp recipe from Mary Ann Mohanraj bookmarked for quite some time, and this seemed like the perfect occasion to test it out. It was just as easy and delicious as I’d hoped, but I want to note a few things:

  • The shrimp need to be marinated so start at least one hour before you plan to cook them.
  • The shrimp will be much easier to turn (especially if you’re using a regular grill instead of a grill pan) if you thread them on skewers first. I'll be doing that next time.
  • Mary Ann specifies Sri Lankan curry powder in her recipe, but just about any curry powder should work fine.

Curried Grilled Shrimp Recipe

Ingredients:

  •  1 ½ - 2 lb raw shrimp (peeled and deveined, thawed if from frozen)
  • ½ cup plain yogurt (Greek yogurt is fine)
  • 1 TBSP curry powder
  • 1 TBSP lime juice
  • 1 tsp black pepper
  • 1 tsp salt
  • 1 tsp cayenne (optional)

Directions:

  1. Whisk all the ingredients except the shrimp together until well-combined.
  2. Add the shrimp and mix until shrimp is fully coated with the yogurt marinade.
  3. Marinate in the fridge for at least one hour and up to one day.
  4. Oil grill or grill pan and set to high heat.
  5. Once the grill pan is hot enough, add the shrimp and cook for 2-3 minutes. Flip the shrimp and cook for another minute or two until done.
Cast of characters: curry powder, lime juice, salt, pepper, plain yogurt, and shrimp

Mix all the marinade ingredients in a medium-sized bowl.

Add the shrimp to the marinade and mix well. Cover and refrigerate for at least one hour and up to one day.

Oil and heat your grill pan on high. Add the shrimp and cook for 2-3 minutes on one side. Flip and cook for another minute or two until done.

Enjoy with rice, salads, grilled vegetables, eggs, bread, etc. 

I was going for a light lunch, so I just had some with grilled asparagus, but I plan on making a banh mi-style sandwich with a toasted baguette, avocado, pickled veggies, and the leftover shrimp for dinner.

    1. Yes, it's simple yet flavorful. I'll definitely be using this recipe again, possibly subbing in sliced chicken thighs as the protein.

  2. Welcome today. My husband LOVES shrimp. Will have to try this for him. Smile Yes mam it is hot. I live in the Chicago suburbs. Yesterday got up to 101 and today is supposed to be the same. Water. Good thing the cats like to stay indoors Smile Did you get the hurricane warning the other night? We had it with lots of rain and wind. Afterwards a few limbs down but mostly water and tree leaves everywhere. Hope you were all safe

    1. Shrimp is one of my favorite foods! Yes, we had the hurricane warning by us, but luckily it was just heavy rain with no damage that I know of. It's supposed to cool off after this week, which I'm grateful for. I love warm weather but consistent 90s-100 is way too much!
