Breakfast Egg Muffins #Recipe @PegCochran / Margaret Loudon


 

I will definitely be making this recipe again!  Hubby was saying how he wished there was such a thing as a grab-and-go breakfast (even though he's not going anywhere but actually eating at the kitchen table but he finds putting anything together for a meal for himself to be a huge ordeal.) This recipe fit the bill perfectly!  It's totally customizable as well.  I didn't have a green pepper so I used half of a red one and half of an orange one.  If you don't care for feta cheese, I don't see any reason why you can't substitute cheddar or your favorite cheese.  The original recipe is from the CNN Health section.

6 regular eggs

Salt and pepper to taste

2 green onions, sliced

½ medium red bell pepper, finely chopped (about ½ cup)

½ medium green bell pepper, finely chopped (about ½ cup)

2 tablespoons flat-leaf parsley, chopped

1/2 cup feta, crumbled

¼ teaspoon crushed red pepper flakes (optional)

 

Preheat oven to 375 degrees.

Spray a 12-cup muffin tin with non-stick spray or use silicone baking cups.  I also sprayed the silicone cups. If using individual silicone cups, place them on a baking sheet.




Whisk eggs until well combined.

Combine remaining ingredients.

 


 

 Add remaining ingredients to eggs.

 

Fill each muffin cup approximately 2/3 full. 


 Bake 18 to 20 minutes.

    1. Yes! We've been reheating them all week. 20 seconds in our microwave for one muffin. You might need to increase that if you are microwaving multiple muffins.

  6. I made these this morning and the were a big hit. Based on what I had on hand I substituted fresh basil for the parsley, shredded cheddar for the feta, and added two strips of crumbled crispy bacon. Looking forward to making this again. Thanks! Irene
