Breakfast Casserole #recipe @vmburns

 VMBURNS: As a kid, my mom wasn't really a morning person. My memories of breakfast consisted of TV Breakfasts that my sister and I would heat in the microwave or cold cereal. Except on Sundays. Every Sunday morning, my dad would make breakfast before we went to church. My father was a creature of habit, capable of eating the same thing every day. So, every Sunday, he prepared the same thing: sausage, eggs (scrambled), rice, and biscuits. My sister didn't like eggs and my mom didn't like rice, but I ate everything. However, after 10 years, even I was tired of the Sunday breakfast usual. And as I got older, I began to skip breakfast. Yes, I know it's the most important meal of the day, but skipping was easier than preparing it myself. I was probably well into my 40s and living in the South before I had my first breakfast casserole and I thought I'd died and gone to heaven. Here were all of the breakfast stables all baked into one glorious dish and covered in cheese! What could be better (or easier) than that? Here's an easy recipe for a Breakfast Casserole that I adapted from a recipe by Paula Deen. Maple sausage may be hard to find, but the casserole is equally good with regular or hot sausage (if you like it spicy). 

Easy Breakfast Casserole




  • INGREDIENTS
  • 1 lb Jimmy Dean Maple Pork Sausage
  • 8 eggs
  • 6 slices white bread
  • 2 cups milk
  • 8 oz triple cheddar cheese
  • 1/2 teaspoon dry mustard
  • 1/2 teaspoon seasoned pepper
  • 1/4 teaspoon Lawry's seasoned salt

  • INSTRUCTIONS
  • Preheat oven to 350 degrees and spray a 9x13 casserole pan with cooking spray.
  • Cook the sausage in a large skillet until browned and crumbly, and then place on paper towels to drain.

  • Cut the crusts from the bread. Slice the bread as needed to fit in the bottom of the baking dish. 
  • Sprinkle the sausage and cheese onto the bread.
  • Mix the eggs, milk, dry mustard, salt and pepper with a whisk and pour over the sausage and cheese.
  • Bake until set, approximately 40 minutes. Let stand for 10 minutes before serving.

  1. My favorite it’s a casserole, but more of a on the go delicious breakfast. I love these muffins any time of day – hot or cold – and they are a whole meal in itself.

    All In One Breakfast Muffin
    1 ¾ cup flour
    1 cup 3 minute oats
    ¼ cup sugar
    1 tsp. baking powder
    ¼ tsp salt
    1 egg, slightly beaten
    1 cup milk
    1/3 cup oil
    ½ pound bacon, cooked crisp and crumbled
    ½ cup shredded cheddar cheese
    1/3 cup onion - finely chopped
    1/3 cup bell pepper – finely chopped
    In bowl combine the dry ingredients (first 5) and set aside. Mix milk, egg and oil.
    Pour wet ingredients into the dry ingredients all at once. Stir only until moistened.
    Stir in bacon, cheese, onion and bell pepper.
    Fill greased muffin pan 2/3 full.
    Bake at 375 degrees for 15-18 minutes
    Makes 1 dozen muffins

  3. I'm with your Mom on breakfast ~ I'm not a morning person. I was in my sixties before I the perfect breakfast & like your Dad I'm happy eating the same thing every morning - three vegetable sausage patties, mild salsa & coffee. Around about 11:00 a.m. though this breakfast casserole would hit the spot. My husband would love it too! lnchudej@yahoo.com

  5. I don't eat breakfast most days because I'm at work but when I get a day off I love cereal, toast, or eggs. Breakfast casseroles are amazing. I usually make one that uses frozen hashbrowns instead of bread.

  7. My challenge with casseroles (breakfast or dinner) is that it seems like I've done enough work before it goes into the oven that I should be able to just sit down and eat, right now!
    That said, this sounds tasty.

  11. I love breakfast food! My favorite meal of the day. We have it for dinner a lot! My favorite casserole is french toast with lots of strawberries. Thank you for sharing your recipe. It looks so good!
