Copycat Panera Broccoli Cheese Soup


My granddaughter introduced me to broccoli cheese soup.  It's her favorite thing to order at Panera.  The last time she visited, she convinced me to try making it at home.  There are lots of copycat recipes out there--this one comes from The Girl Who Ate Everything blog.  I did make a few tweaks to accommodate my granddaughter's preferences--no onions and definitely no carrots!  The soup was still delicious but feel free to add those back in if you wish.  If you want a smoother soup, blend with an immersion blender. Note: my pictures reflect the changes I made.

1/4 cup butter

1/2 medium chopped onion

1/4 cup flour

2 cups half-and-half cream

2 cups chicken broth

1/2 lb. broccoli, chopped into bite-sized pieces

1 cup carrots, julienned (or matchstick carrots from produce section)

1/4 teaspoon nutmeg (optional)

8 ounces grated sharp cheddar cheese

salt and pepper 

 

Melt butter in a saucepan over medium heat.  Stir in onions and sauté until onions soften.

 


 

 

Sprinkle flour over butter/onion mixture and stir for one or two minutes to cook the flour.

 


 

 

Slowly whisk in the cream and the chicken broth and stir until combined and slightly thickened.


Stir in broccoli and carrots and simmer soup for 20 to 25 minutes.

 



Lower heat and stir in cheese until melted.  Salt and pepper to taste and nutmeg if desired.

    1. She's 12 and *thinks* she doesn't like onions but has had them in many dishes without realizing it! She loves anything spicy and one of her favorite dinners is salmon and asparagus!
