Chocolate Lava Cake from @TinaKashian1

Hello from TINA KASHIAN! I’m a chocoholic and have a bit of dark chocolate every day. My husband, John, and I attended a cooking class through Cozymeal as a birthday gift and one of the recipes we prepared was chocolate lava cake. It’s a decadent dessert, and I’m happy to share the recipe.

Ingredients:

1 stick unsalted butter

6 oz semisweet chocolate chips

2 large eggs

2 egg yolks

¼ cup sugar

1 teaspoon salt

3 tablespoons flour

Cooking spray

Ice cream to serve (optional)

Preheat the oven to 450 degrees F. Spray two ramekins with nonstick cooking spray and place them on an aluminum lined baking sheet. In a medium bowl melt the butter and chocolate chips in a microwave. Once melted, stir until the chocolate chip and butter mixture is smooth. Using a mixer, beat the eggs, egg yolks, sugar, vanilla, and salt for four minutes at high speed. Whisk the melted chocolate and flour together. Quickly fold it into the egg mixture.

Pour the batter evenly into the two ramekins. Bake for twelve minutes. Allow the ramekins to cool.

Cover each ramekin with an inverted dessert plate. Turn each one over and allow it to unmold. Serve with your favorite ice cream or fruit. Garnish with confectioners' sugar or chocolate sauce if you'd like, too. Enjoy!

    1. Hi Kay, cheesecake is my oldest daughter's favorite. I don't make it and we usually order it when we are out as a special dessert. Chocolate cheesecake wounds perfect for me.

  3. Yum, I am a chocoholic too, and this recipe looks easy enough to try. My fave desserts are lemon-based ones. Having said that, today is 3.14 Pi Day, so I will seek out a pie to enjoy.

  4. I love anything chocolate but oddly enough I'm not a huge fan of chocolate ice cream. I, too, eat a square of dark chocolate with sea salt every day. It has antioxidants, right?
