Hello from TINA KASHIAN! The cold weather is far from over and soup is one of my favorite comfort foods. I’m sharing a recipe for Mediterranean lentil soup that I remember my own mother preparing on cold days. This recipe adds some spinach to make it extra healthy.
Ingredients:
2 Tablespoons extra virgin olive oil
1 diced onion
2 large carrots, chopped
2 celery stalks, chopped
2 cloves minced garlic
½ teaspoon cumin
½ teaspoon dried thyme
1 bay leaf
1 cup brown lentils
6 cups chicken broth
2 ounces tomato sauce
1 cup fresh spinach
Directions:
In a large pot, add the olive oil, onion, carrots, celery, and garlic and sauté over medium heat for 12-13 minutes. Stir often. Add cumin and cook for an additional minute.
Add chicken broth, lentils, tomato sauce, thyme, and bay leaf. Bring to a boil then reduce heat and simmer for 30 minutes. Turn off heat.
Pour in serving bowl. Enjoy!
