Roasted Cabbage #recipe by Mia P. Manansala @MPMtheWriter

Cabbage is my favorite vegetable. A rather boring choice for many, but I love the versatility of the vegetable, and it’s delicious, crisp sweetness (plus it’s frugal price tag and long shelf life) means it shows up fairly often on my dinner table. This is a new preparation for me, one I tested at Christmas lunch with my family and that I love enough to keep in constant rotation.

Roasted cabbage wedges



Roasted Cabbage Recipe


Ingredients:

  • 1 head of cabbage
  • Olive oil
  • Salt
  • Pepper
  • Red pepper flakes, optional
  • Lemon slices, optional

Directions:

  1. Preheat the oven to 450 degrees Fahrenheit.
  2. Slice the cabbage into thin wedges and remove and discard the hard core.
  3. Rinse the cabbage wedges well and pat dry.
  4. Lay on a baking sheet and spray/drizzle with oil and season with salt, pepper, and pepper flakes (if using).
  5. Flip the wedges over and do the same to the other side.
  6. Slide the baking tray into the oven and roast for 15-20 minutes.
  7. Carefully remove the tray, flip the wedges over and return to the pan for another 15-20 minutes.
  8. If desired, squeeze fresh lemon juice over the cabbage. Enjoy! 

NOTE: an interesting variation is to add a drizzle of soy sauce as well. Soy sauce and cabbage go so well together!


Slice cabbage thickly, wash, and pat dry on paper towels before laying on a baking sheet.

Spray or drizzle with olive oil.

Sprinkle with salt, pepper, and red pepper flakes (if using). Flip cabbage slices over and oil and season the other side as well.

Roast in a 450 degree Fahrenheit oven for 15-20 minutes. Flip the slices and roast for another 15-20 minutes.

Remove from the oven and squeeze lemon juice over the cabbage. Enjoy!
