Low Calorie Sloppy Joes



 

This is a Weight Watchers recipe.  I've been trying to eat lightly to "make weight" for our daughter's wedding today. (Yes, I'm very excited!)  If you like sloppy Joes, I don't think you'll be disappointed in this lightened up version.  I couldn't find crushed tomatoes in puree so I just used a can of puree.  I think it was actually a 28 ounce can--not sure they make 20 ounce cans.  I like to toast the buns, but that is up to you.  Also, I used a green pepper--I don't see why you couldn't substitute a red pepper if you prefer. 


Interesting side note:  Where I come from in New Jersey, a sloppy Joe is actually a sandwich.  A handful of delis make them and they are delicious--three pieces of rye bread; your choice of ham, turkey or roast beef; cole slaw; Swiss cheese and Thousand Island dressing.  They're best if made the night before so the bread can "marinate" in all the flavors. 

 

2 tsp. olive oil

1 small onion, chopped  

2 ribs celery chopped

 1 bell pepper, chopped

 1 lb. lean ground turkey breast

 1Tbsp chili powder

 2 tsp. dried basil

Salt & pepper to taste

 1/8 tsp. cayenne pepper

 20 oz. canned crushed tomatoes in tomato puree

 ¼ cup ketchup

 1 Tbsp. Dijon mustard

 1 cup frozen corn kernels

8 Hamburger buns 

 

Heat oil over medium-high heat.

Add onion, celery and bell pepper and sauté until tender. 

 




Add turkey and sauté until browned. 


 

Add chili powder, basil, salt, black pepper and cayenne and stir.

Add crushed tomatoes, ketchup and mustard, stir.


 

Bring mixture to a boil, reduce heat, partially cover and simmer, stirring occasionally, 30 minutes.

Stir in corn and simmer until heated through.

Spoon mixture onto rolls and serve hot.

    1. I think that this meaty mixture would also be tasty over rice or noodles. If someone is watching their carbs, it could also be served over cauliflower rice! I have just started reading A Fatal Footnote and I am enjoying it - thank you!

    3. I agree with Nancy. We'd love this served over rice or Amish noodles. Sloppy Joes here in east Texas are served on hamburger buns & are a mix of meat, onions, garlic, chili powder & Worchestershire but there are probably as many ways to make Sloppy Joes as there are cooks who make it. :)

      1. Linda, I live in (north) East TX too! I always tweak recipes to suit us, and for the past several years have used Ellie Krieger's Sloppy Joe recipe. Don't make them often but they sure are tasty!
