Easy steak salad #summer salads #BBQ



 

This summer has been very steamy here.  I have little desire to be near the stove, so thank heavens for salad and the BBQ.  The beauty of a salad is that you can add pretty much anything you want to it. 

On a recent BBQ, two family members couldn’t make it at the last minute and there we were with two extra steaks on the grill. Yes!!! Although we missed seeing our guests,  we really love leftover steak.  The next night, a hot and humid summer evening, we treated ourselves to this salad.

We had some of our own lettuce in a pot screaming  'Eat me soon!, parsley and chives that needed clipping and the first of our tomatoes coming through.  You can’t beat summer.  We usually have feta cheese and bell peppers on hand and whatever we need for salad dressing.   I wished the bell pepper had been yellow or orange, but you can’t have everything. My husband thought the salad would be nice with any variety of blue cheese and that’s something we’ll try the next time.   

I’m pretty sure some of you will pop in with suggestions of what you would add or subtract from this one. 

INGREDIENTS

Slices of leftover steak, enough for two

1 tomato, chopped

1 bell pepper, seeded and chopped

2 cups fresh lettuce, torn

Handful of fresh parsley (or dried)

Handful of chives, chopped

Half a cup of crumbled or cubed feta (or however much you want)

2 tablespoons olive oil

1 1/2 tablespoon white Balsamic

2 tsp Dijon mustard

2 cloves garlic, minced

½ tsp paprika (not sweet) or ¼ tsp hot sauce

S & P to taste

 

DIRECTIONS:

Whip the olive oil, white Balsamic, Dijon, minced garlic, paprika and S & P in a pitcher or shake well in a covered jar if that's how you roll.

Combine the salad, chopped tomato and bell pepper.  Add parsley and chives.

  

Top with feta and mix in salad dressing.

Top with sliced steak.

 Mix and dig in.

  1. This is exactly the recipe I needed on this very hot day! And I'm going with your husband's blue cheese suggestion because I know it will make my husband super happy. What is it with guys and blue cheese???
