Pesto Chicken from @MaddieDayAuthor #giveaway

 MADDIE here, with a quick and easy summer dinner recipe. I've been making al pesto sauce from my great-uncle Jimmy Henderson's recipe since I was in college, and I shared that recipe here last summer. What better thing to whip up when the basil and garlic are both ready in the garden or at your local farm stand?



I just made a fresh batch of pesto and decided to marinate some chicken thighs before grilling. They came out so good, I wanted to let you know how I did it.

Pesto Chicken

Alert readers will note I forgot to include the lemon, salt, and pepper in the photo!

Ingredients

2 pounds boneless chicken thighs, trimmed of excess fat

2 tablespoons pesto

1 tablespoon lemon juice

¼ cup olive oil

2 tablespoons sherry

½ teaspoon salt

¼ teaspoon pepper


Directions

Combine ingredients.



Marinate thighs for at least four hours covered in the refrigerator, turning hourly. 


Grill on both sides, basting with excess marinade. Serve with corn or potato salad and a green salad. You can also make kebabs using the same marinade. Enjoy!

  1. I think my favorite way is grilled on top of a greek salad. Yummy! So refreshing in the hot summer months. Congratulations on the 2 books coming out! I do love pesto. Thank you for the recipe. =)

  2. In the summer I love to cook my chicken on the grill to help keep the kitchen and house cool. I enjoy cooking my chicken in various ways such as with a marinade, on skewers with assorted veggies and even a beer can type of chicken. Thanks for the idea of using pesto to grill with.

  6. Oh, that Pesto Chicken looks so yummy! I'll definitely be giving that recipe a try.

    In the summer time hubby does a lot of grilling and smoking of meats to take some of the heat out of the kitchen while I fix the sides. One of my favorites is smoked chicken. (Posted a photo on Facebook) I was just thinking how delicious it would be too cook it that way with the pesto sauce. I'm also a big fan of BBQ chicken. Face it I love chicken just about any way as long as it doesn't cluck.

  12. Pesto is not usually one of our favorites but I must admit I never thought of putting it on chicken to grill, so think I'll give it a try. My husband is the grill master and he usually adds a dry rub - surprises us with which flavor but always has a bit of heat - and we are happy diners! Thanks for the giveaway.

  20. It's usually marinated then grilled for fajitas, or on skewers or barbecued. I love chicken any way, but especially on or in all kinds of salads in summer. Since I've had the Instant Pot for a few years now I learned it doesn't heat up the kitchen, so we have it various ways once or more a week. lola777_22 at hotmail dot com
