Grilled Shrimp from @MaddieDayAuthor + #giveaway

MADDIE here, so grateful the temperatures broke yesterday. To celebrate I'm doing a special giveaway - details at the end.

It was HOT in New England this week, with highs of 95 for five days in a row, and the humidity was way up, too. My significant other's shoulder is out, so he couldn't lift the AC unit into the window, and I've never been quite that strong. The inside of our house just got hotter and hotter. 

I know those of you in desert climes are laughing at me, a native southern California turned Massachusetts heat-wimp. C'est la vie!


Suffice it to say, I didn't want to cook in the kitchen. So how about nice pound of marinated grilled shrimp with some quick-toasted naan and a green salad? It sounded good to me. I figured out a recipe, mixed up the marinade, and set the defrosted shelled shrimp to chill in it. 

Except at exactly the time I wanted to be grilling, a big sudden thunderstorm rolled in. Yikes! As you'll read in what follows, one can't let shrimp sit in a marinade indefinitely. So the recipe I present you is flash-sautéed marinated shrimp, not grilled. Sorry readers. We do what we have to do. It was tasty even so. You can just pretend I grilled it.

Grilled Shrimp

Ingredients


3 tablespoons olive oil

¼ cup freshly squeezed lime juice

2 teaspoons minced garlic

2 tablespoons chopped fresh dill

1 teaspoon Worcestershire sauce

Pinch of salt

Pinch of black pepper

Pinch of smoked paprika

1 lb. raw, peeled, and deveined shrimp

Directions

Mix all ingredients in a bowl big enough to hold the shrimp. 




Cover and refrigerate for at least twenty minutes, but no longer than an hour or the shrimp will become soggy.

Heat grill or coals. Add shrimp to skewers or lay on a grilling pan. Alternative: heat oil in a saute pan.

Cook only a few minutes per side, just until they become opaque.

Serve immediately with bread and green salad.


And voilá! Even without being grilled, it was a tasty quick dinner and barely added any heat to the house.

  3. One of my favorite fast home-cooked meals is microwave meatloaf. In about 15-20 minutes you have great main dish. Add a side veggie and salad and dinner is done.

    This is my recipe for what the cookbook calls Fancy Meatloaf.
    Fancy Meat Loaf
    Yields: 4 to 6 servings
    Ingredients
    1 lb. ground beef
    2/3 cup quick-cooking rolled oats
    ¼ cup minced onion
    ¼ cup chopped green pepper
    ¼ cup chopped celery
    1 egg beaten
    1 clove garlic, minced
    1 tablespoon minced parsley
    ½ cup tomato juice
    ¾ teaspoon salt
    ¼ teaspoon pepper
    ¼ cup catsup
    Directions
    Combine all ingredients except catsup in a large missing bowl. Pat mixture evenly into a 1 ½ quart dish. Cook in microwave on full power for 6 minutes.
    Drizzle catsup on the top of the meatloaf. Cook in microwave on full power for 5 minutes or until temperature of 160 degrees is reached.

  4. Can't wait for the new books, love all the series.

    Tuna casserole is always the standby if we need fast comfort food, but since I can't stand to waste food and love to experiment we often have a stir fry or casserole or salad or something that makes use of fresh veggies and whatever else I happen to have leftover or on hand.

  5. I think that shrimp wins for speed and looks delicious! I do quesadillas in a pan on the stove for a quick meal, easy to use up leftovers or things on hand.

  6. We had shrimp last night. Kind of a shrimp scampi primavera with some pesto!
    One glitch was I thought the shrimp were peeled and deveined. They were deveined, but not peeled. A bit of a nuisance. Still tasty, though, with pasta and all the primavera veggies.

  7. It's been really hot here too. I've been using my air fryer lately, it's fast and doesn't heat up the house. The shrimp recipe looks like a great and delicious.

  14. Our favorite quick dinner our version of a Chicken Caprese Panini. Spread Pesto on inside of two slices of sourdough bread. Add sliced tomato or diced cherry tomatoes, chicken and cheese. We like to use Swiss cheese. It has adds a little extra flavor and is less stringy than mozzarella. Grill until bread is golden brown and cheese has melted. Serve with a salad.
