#Hasselback Potatoes with Cilantro-Peanut Dressing by Denise Swanson

 We don't eat much red meat, but when we do, we like a good steak dinner. The challenge is what to serve as sides. I've been wanting to try Hasselback Potatoes ever since seeing them on some cooking show so when I found this recipe, I decided to tweak it for our  Valentine's Day meal. Along with some roasted Brussels sprouts, it makes any occasion special.


 

  • 2 large russet potatoes, scrubbed
  • 3 tablespoons extra-virgin olive oil, divided
  • 1 teaspoon ground pepper
  • ½ teaspoon salt
  • Zest of 1 lime
  • 1/4 cup lime juice
  • 2 teaspoons fish sauce
  • 1 teaspoons honey or maple syrup
  • 1 Tablespoon dry cilantro
  • 1/2 cup unsalted peanuts, chopped
  • 1 teaspoon green chiles, minced
  • 1 cloves garlic, grated

 

Preheat oven to 425°F. Line a baking sheet or roasting pan with foil.

Make cuts every 1/8 to 1/4 inch in each potato, slicing deeply but not all the way through, to create a fanlike appearance. Brush the potatoes with 2 tablespoons oil, taking care to coat the cut surfaces well. Season with pepper and salt. Place the potatoes on the prepared pan. Roast until golden brown and slightly crispy, 1 to 1 1/4 hours.





Meanwhile, whisk the remaining 1 tablespoon oil, lime juice, fish sauce and honey (or maple syrup) in a small bowl. 







Add lime zest, cilantro, 








peanuts, chiles and garlic; mix well. 








Serve the potatoes drizzled with the dressing.

     Even though Lexie doesn’t believe the nonsense about her being the Ravenscraft Shield, she does believe her father was murdered—a father she never knew existed, and she investigates his death.

     Too bad, whoever killed her father, now wants Lexie dead as well.

  1. I'd call these Asian hasselbacks.
    Usually the potatoes are dressed, before baking, with grated cheese and spices in the slots.
    Fun, aren't they?

  2. I love Hasselback potatoes! But I've often had ones at restaurants that weren't cooked all the way through. Gonna have to try making them myself (and cooking them long enough, lol). Thanks for the recipe, Denise!
