I have to admit, that although this soup turned out to be delicious, it is not quick or easy. One issue that may have impacted the time it took to make this is that my food processor was not large enough and I had to process the filling in stages. Another was that I just couldn’t seem to get the amount of filling correct. It either was too much, and oozed out the sides of the won ton wrapper, or too little.
However, if you have a large food processor and nimble fingers, it truly is a yummy dish!
4 cups unsalted chicken stock
2 tablespoons minced ginger
2 tablespoons sesame oil, divided
4 teaspoons soy sauce, divided
2 teaspoons white miso
½ cup Brussels sprouts, trimmed
6 ounces peeled and deveined raw shrimp
½ cup mushrooms
2 scallions, white and green parts separated and sliced vertically
1 teaspoon rice wine vinegar
1 teaspoon cornstarch
1 pinch of salt
24 each fresh square wonton wrappers
1 cup frozen peas and carrots
Next, bring 2 quarts of water to a boil in a large pot.
Stir peas and carrots into stock. Cover to keep warm.
Use the slotted spoon to divide the wontons between 2 bowls, then ladle about 1 cup of the broth and vegetables into each bowl. Repeat with the remaining wontons and broth.
Serve topped with scallion greens.

believe her father was murdered—a father she never knew existed, and she
investigates his death.
