#Wonton Soup with Shrimp, Mushrooms & Brussels Sprouts by Denise Swanson


I have to admit, that although this soup turned out to be delicious, it is not quick or easy. One issue that may have impacted the time it took to make this is that my food processor was not large enough and I had to process the filling in stages. Another was that I just couldn’t seem to get the amount of filling correct. It either was too much, and oozed out the sides of the won ton wrapper, or too little.

However, if you have a large food processor and nimble fingers, it truly is a yummy dish!


4 cups unsalted chicken stock

2 tablespoons minced ginger

2 tablespoons sesame oil, divided

4 teaspoons soy sauce, divided

2 teaspoons white miso

½ cup Brussels sprouts, trimmed

6 ounces peeled and deveined raw shrimp

½ cup mushrooms

2 scallions, white and green parts separated and sliced vertically

1 teaspoon rice wine vinegar

1 teaspoon cornstarch

1 pinch of salt

24 each fresh square wonton wrappers

1 cup frozen peas and carrots


Combine stock, ginger, 1 tablespoon sesame oil, 3 teaspoons soy sauce and miso in a large saucepan. Bring to a boil over high heat, then reduce heat to maintain a bare simmer and cover.

Next, bring 2 quarts of water to a boil in a large pot.

Meanwhile, pulse Brussels sprouts in a food processor until chopped. Add shrimp, mushrooms, scallion whites, rice vinegar, cornstarch, salt and the remaining 1 tablespoon oil and 1 teaspoon soy sauce; pulse, scraping down the sides as necessary, until the mixture forms a paste.

Lightly dust a baking sheet with cornstarch. (I like working on my granite so skipped the baking sheet) Assemble 6 wrappers at a time, place a rounded teaspoon of the shrimp filling in the center of each. 

Wet the edges of the wrapper and fold it in half over the filling to form a triangle. Press on both sides to seal. 

Stir peas and carrots into stock. Cover to keep warm. 

Add half the wontons to the boiling water and cook, stirring gently to prevent them from sticking, until they float to the surface, 2 to 4 minutes.

 Use the slotted spoon to divide the wontons between 2 bowls, then ladle about 1 cup of the broth and vegetables into each bowl. Repeat with the remaining wontons and broth. 

Serve topped with scallion greens.

     Even though Lexie doesn’t believe the nonsense about her being the Ravenscraft Shield, she does believe her father was murdered—a father she never knew existed, and she investigates his death.

     Too bad, whoever killed her father, now wants Lexie dead as well.

  1. I gather you found the rounded teaspoon of filling to be the perfect amount.

  2. Although that was the recipe's instruction, rounded teaspoons were sometimes too much and sometimes too little so I guess my rounding skills are faulty. LOL
