I try to prepare two-three meatless meals per week. Luckily. my husband and I both like tofu. We'd never tried baked/smoked tofu before, but after tasting it in this recipe we are sold!
This recipe is not only super easy and fast, it is really tasty. We had it with veggie egg rolls over riced cauliflower and it was a very filling meal with a reasonable amount of calories.
Ingredients
4 tablespoons peanut oil or canola oil, divided
1 pound mixed mushrooms, sliced
1 medium red bell pepper, diced
1 bunch green-tail onions, trimmed and cut into 2-inch
pieces
1 tablespoon grated fresh ginger
1 large clove garlic, grated
1 (8 ounce) container baked tofu or smoked tofu, diced
3 tablespoons oyster sauce (I couldn't find oyster sauce and subbed in soy sauce)
There is a bit of chopping necessary, but you could buy sliced mushrooms, which would only leave you with the pepper, onions, and tofu.
Heat 2 tablespoons oil in a large flat-bottom wok or
cast-iron skillet over high heat. Add mushrooms and bell pepper; cook, stirring
occasionally, until soft, about 4 minutes.
Stir in onions, ginger and
garlic; cook for 30 seconds more. Transfer the vegetables to a bowl.
Add the remaining 2 tablespoons oil (Next time I'm reducing this to 1 tablespoon) and tofu to the pan.
Cook, turning once, until browned, 3 to 4 minutes.
Flipping the tofu is a bit tricky, but totally worth it to get the nice browning on both sides.
Stir in the vegetables and
oyster sauce. Cook, stirring, until hot, about 1 minute.
Divide between four plates.

DeleteTofu can really work well. And the sauces are unlimited.
ReplyDeleteI just made spaghetti for dinner. I had sauce left over that needed to be used. I diced up a block of tofu and stirred it in with extra onion, garlic, and herbs. Even my 4 year old granddaughter liked it.
A trick with tofu is to freeze it. Thaw it and squeeze out the excess water. It changes the texture to a firmer, more sponge like one that absorbs sauces better.
That's one thing I really liked with baked tofu is that it was already firm so one less step.
