#Spicy Noodles with Pork, Scallions & Bok Choy by Denise Swanson

On my never-ending quest to find healthier options to our Chinese food addiction, I stumbled across this recipe. There were a few ingredients that I couldn’t find, but after coming up with substitutions, my husband I loved it. I serve it with air-fried veggie egg rolls.

7 ounces thin rice noodles or rice sticks
2 tablespoons canola oil, divided
I lb. baby bok choy, chopped, greens and whites separated
3 green tail onions, green and whites separated
2 tablespoons minced ginger
¼ cup chile-garlic sauce
1 lb. ground pork
2 cups unsalted chicken broth
3 tablespoons reduced-sodium tamari or soy sauce
1 teaspoon white sugar or sugar substitute
1 tablespoon cornstarch
1 tablespoon water
Crushed red pepper for garnish

Cook noodles according to package directions. Drain and rinse under cold water. Set aside.

Meanwhile, heat 1 tablespoon oil in a large flat-bottomed skillet over high heat. Add bok choy whites and cook, stirring, for 1 minute. Add bok choy greens and cook until wilted, about 1 minute more. Transfer all the bok choy to a medium bowl.

Add the remaining 1 tablespoon oil, onion whites, ginger and chile-garlic sauce to the pan. Add pork and cook, crumbling with a wooden spoon, until no longer pink, 3 to 5 minutes. Add broth, tamari (or soy sauce) and sugar.

Mix cornstarch and water in a small bowl and add to the pan. Bring to a boil and cook, stirring, until slightly thickened, about 1 minute.

Stir in the reserved noodles and bok choy; cook, stirring, until heated through, about 1 minute.

Serve topped with green onions and crushed red pepper, if desired.

OUT NOW:  A CALL TO CHARMS (FIRST IN THE FOREVER CHARMED MYSTERY SERIES)

A Call to Charms

Chocolate, men, and magic. Who can turn down that inheritance?
If life had gone as she planned, Lexie Green would have been teaching English at a prestigious university, not persuading spoiled, rich women to buy overpriced clothes they didn’t need and often looked ridiculous wearing. Can you say electric yellow see-through skirts and Torn jeans with unfinished hems?
Still, although this isn’t the life Lexie would have chosen, all is going well. At least until Lexie is fired and her deranged ex-boyfriend tries to kidnap her.
Deciding that it’s better to accept a mysterious inheritance from a great aunt she’s never heard of rather than end up kept in a cage as her ex’s pet poodle, Lexie packs up and heads to Kansas. So, what if she has to go by a new name and live in a town that she can’t find on a map?
Unfortunately, once she arrives in her new hometown, everyone there seems just a tad off-kilter and Lexie’s cousin insists that the citizens are magical. At least there are a couple of hot guys hanging around for eye candy.
Even though Lexie doesn’t believe the nonsense about her being the Ravenscraft Shield, she does believe her father was murdered—a father she never knew existed, and she investigates his death.
Too bad, whoever killed her father, now wants Lexie dead as well.

I'm curious about "green tail onions" I don't recognize this item. Scallions? Green onions?

  2. Green tail onions are similar to scallions, but a lot less expensive and more readily available in rural grocery stores. In the picture, they are in the upper left. I've always called them green tails. but may indeed be green onions in other parts of the country.
