Key Lime Pie for The Key Lime Crime @LucyBurdette #giveaway


LUCY BURDETTE: Obviously, we cannot launch a book called THE KEY LIME CRIME without a recipe for Key lime pie. I got a little giggle from an early reviewer who said she hadn't thought she could enjoy a book based on key lime pie. However, not only did she love the book, she was now craving pie...in case this should happen to you next week, here's the recipe...

Ingredients for the crust

10 sheets of graham crackers, should measure 1 1/4 cups
5 tablespoons butter, melted
1/4 cup sugar
Whir the graham crackers in a food processor until they make fine crumbs. Mix in the sugar and the butter. Press the mixture using the back of a spoon into your nine or 10 inch pie plate. Nine is probably better as my pie was a little low. Bake the crust at 350 for 10 minutes until it starts to brown. Remove it from the oven and reduce the heat to 325.

Ingredients for the filling


1/2 cup key lime or lime juice, freshly squeezed
Four egg yolks
1 14 ounce can sweetened condensed milk
2 teaspoons grated lime zest

Squeeze the limes until you have 1/2 cup of juice. (4-5 regular limes, more key limes.) Make sure to strain out the seeds. 


 


Whisk the egg yolks, then whisk in the sweetened condensed milk, lime juice, and lime zest.  







 

Add the filling to the pie crust and bake for six minutes. Remove from the oven and set this aside while you make your meringue.

 



Ingredients for the meringue

Four egg whites
1/4 teaspoon cream of tartar
1/2 cup sugar
One half teaspoon vanilla


Using a clean bowl and mixer, beat the egg whites and cream of tartar until they hold soft peaks. Gradually beat in the sugar until the egg whites hold stiff peaks and appear shiny but not dry. Beat in the vanilla. 


 
Attach the meringue to the hot pie, beginning by adding globs all around the edge of the crust and smoothing them into a circle. (That's the  technical culinary term--add globs.) 

Then add remaining meringue to the center and smooth or shape into peaks as desired. Bake the pie for another 20 minutes. Cool on a rack. Refrigerate until serving.

And now serve yourself a nice piece of pie and start reading...

  2. Oh yum! When we visited Key West I had Key lime pie for dessert every day. Only one restaurant had a bad one. I remember which one so I won’t make that mistake again.

  7. My favorite was the Key Lime Pie at the Floridian at Disney World. The chef gave me his recipe, and it is this one! I have a good harvest of Key limes on the tree in my backyard, so I cannot wait to make this.

  13. That pie looks so delicious! I have lots of favorites, including lemon meringue, chocolate cream, and cherry. One that sticks out in my memory was the Bourbon Chocolate Pecan pie we had every time we visited the (now long-gone) lovely old Harbor View restaurant on St. Thomas,USVI. Their recipe was "secret" but I've since found some good comparable ones online! Oh, we love Key Lime Pie, too! lola777_22 at hotmail dot com

  14. My favorite pie to make is "American Flag Pie" a recipe from King Arthur Baking. It always gets compliments for both presentation and taste. I am especially happy about the presentation part because I just can't make things look pretty. For eating I enjoy almost any fruit pie. My husband likes lemon meringue and key lime, so I am looking forward to giving this recipe a try. Lroth@pcext.com

  16. There's a place (called The Restaurant) in the small town my cousin lives in that has the best homemade pies. The woman who makes them comes in once a week & they sell out fast. Her peanut butter chocolate pie is my favorite.

  22. I always loved a coconut cream pie but when I lived in Key West I had key lime pie for the first time. It is definitely one of my favorites. I made one a couple of months ago and my family inhaled it, I didn't even get a slice. Congratulations on the new book. I can't wait to read it, I love that you use some actual street names and places in the book from Key West. I have suggested your books to a few of my other misplaced Florida friends and we all enjoy them.

  24. I have only had key lime pie a few times -- both times when visiting Florida. I don't know if it was the best pie I have ever had, but I must say this last time (a few years ago) -- it was really good, totally memorable. But, I guess the best pie I ever had was my Mom's --

  25. Thank you for the recipe for Key Lime Pie. It reminds me of the lemon meringue pie my Granny made other than she used a vanilla wafer crust. I'll definitely be making this to see if it tastes as good as it sounds.

    One of my absolutely favorite pies is Millionaire Pie. This is the recipe for it.
    MILLIONAIRE PIE
    INGREDIENTS:
    1 prepared graham cracker crust
    1 cup sweetened flaked coconut
    1 can (15.25oz) crushed pineapple, well drained
    1 cup maraschino cherries , drained & chopped
    1/2 cup chopped pecans
    1 can Sweetened Condensed Milk (14 oz)
    5 tablespoons lemon juice
    1 tablespoon maraschino cherry juice
    1 1/2 cups whipped topping (plus extra for garnish if desired)
    DIRECTIONS:
    In a large bowl, combine coconut, crushed pineapple, maraschino cherries, pecans, (Eagle Brand) Sweetened Condensed Milk, lemon juice and maraschino cherry juice.
    Gently fold in whipped topping. Pour into crust.
    Top with additional whipped topping and cherries if desired. Refrigerate 3 hours or overnight.
    NOTES:
    Do not skip or substitute the lemon juice or this pie will not set properly.

    Seems like everyone else's is coconut cream pie or at least that is the one I get asked to make most often.

  26. I love Key Lime Pie. A friend served a version that she called a Margarita Pie. The Key lime filling was in a pretzel (perhaps crushed pretzels mixed into the normal) pressed crumb crust. I think that was my favorite, or at least within memory.

  28. Cannot wait to listen to this book. I pretty much can only do books on CD or MP3 or Audible now due to ma Ukraine degeneration so this office is VERY exciting to enter. As to pies, I come from a family of very talented home bakers and I also love to bake.pies. It is very difficult to name my favorite as I have a couple of types in each category. Fruit pies are my favorite ones with rhubarb or strawberry rhubarb each spring as well as Fresh blueberry (just picked) and in the summer we love lemon meringue and key lime for sure, and fall means fresh picked apple pies with at least two varieties of apples in each. Then for nut pies we adults love pecan with double the sweet glorious soft Filling and for cream pies we love chocolate cream or chocolate mousse. But my childhood through about age 40 top favorite was Chocolate Butterfluff Pie which was made from a Land O Lakes butter recipe. My Mom would make her homemade crust then get the chocolate filling REAL HIGH and then add a huge layer of sweetened heavy whipped cream on top then freeze it. It was a cross between ice cream and chocolate mousse and was phenomenal. One reason that I’ve hardly made it in recent years is because it uses raw eggs and we have no close by farm to get really fresh eggs. I have multiple auto immune diseases and I don’t take chances with raw eggs or raw fish so unfortunately don’t make this pie nowadays. Sorry to give you my very long list but I could hardly give one pie only as my favorite!!!

  33. I love key lime pie but no meringue, please. My favorite pie is pecan but I'll eat most any kind. My mother was a great baker but I'm not good at pie dough so mostly buy my pies. Stay safe and well.

  34. Last year, I enjoyed the best pie I ever had: Key Line pie directly from the factory in Key West! We vacationed in Key West, in part, because I love key lime pie, and, of course, we stopped in the store at the factory. I can also recommend the key lime coconut pie!
