You probably know by now that I have a new series coming out June 30. The Fairy Garden Mystery series. The first title is A SPRINKLING OF MURDER.
Whewie, but this has been an unusual time to promote a new book! My bookstore visits will all be virtual visits now, although I will go to Mysterious Galaxy in San Diego a week after the virtual party because I can drive, and I will personalize books for those who buy them during that virtual visit. Now, let's talk food!
What I need during this stressful time is a good sweet treat. And it's peach season. Yay. My favorite time of year. I went to my local vendor and bought white and yellow peaches. And then I searched for a good cobbler recipe online. I didn't have one in my peach cookbook.
Well, this one is killer. Truly. Delicious decadent. The only tasking chore is to remove the skin from the peach, but if you boil a pot of water and douse the peach for about 20 seconds, the peel should almost slide off.
Also, I made my cobbler gluten-free, but I didn't do anything but swap out the flour. I didn't add xanthan gum or any other goodies to the mixture. A cobbler is meant to be looser than a cake or pie. Therefore, this recipe works for all of you.
I would recommend you share with family. It will need to be eaten within days or the cobbler will get soggy. I, living alone, have learned how to dig out the peaches days later and eat them without the cobbler topping. Yum! Excellent with ice cream.
One must learn to adapt, right?
Drop spoonfuls of flour (*or gluten-free flour) mixture over peaches. Spread with wet fingers if necessary.
