This has got to be one of the quickest, easiest, and tastiest pasta recipes I’ve ever used. I got it from my daughter, Julia. The recipe below makes enough for two people, or two meals for one person. It’s easy to adjust for the number of people you are feeding.
One Pot Pasta with Tomatoes and Peppers
½ onion
½ each red pepper, yellow pepper, green pepper
½ jalapeno pepper
1 package cherry tomatoes
1 tbsp tomato paste
2 cups pasta such as fusilli
4 - 5 cups vegetable broth
Salt and pepper
1 tbsp crème fraiche, or butter
Grated cheese for serving
In a large saucepan, sauté onion and peppers in a splash of olive oil until onions are soft
Add uncooked pasta, cherry tomatoes, tomato paste, and vegetable broth (broth should cover the pasta). Add salt and pepper to taste. Stir well.
Bring to boil and then simmer until pasta is cooked (about 10 minutes) and tomatoes have turned into a beautiful sauce
Add butter or cream and stir until combined and serve with grated cheese, if desired and/or more pepper.

It does look good. I have been leery of these one pot pastas, since the pasta goes in the sauce uncooked. But the more recipes I see like this, the more I believe.
