Homemade PIzza in the Time of Sheltering in Place #Recipe @PegCochran



Hopefully you are staying home and staying safe! In this time of sheltering in place, it isn't easy to go grocery shopping and those of us in a high risk category are probably trying to avoid it as much as possible.

This can lead to some interesting recipes when you open the refrigerator and the pantry door and wonder what you can create with the contents.  It's like an episode of one of those cooking shows where they say to the contestants--you have an avocado, chicken livers, a bunch of radishes and some maple syrup...now GO!

I wanted something for lunch but didn't have any real lunch options so I had to get creative.  This isn't a recipe so much as some loose instructions!  I had tortillas, some leftover pizza sauce and a mozzarella stick...so I made pizza!

Ingredients:

Tortilla
Pizza sauce or tomato sauce
Mozzarella cheese 
Toppings if desired
Fresh basil or dried oregano or Italian herbs

Preheat oven to 425 degrees.

Spray a cast iron skillet with cooking spray and heat over medium heat.



Place tortilla in hot pan and cook until bottom begins to turn golden.  


Remove pan from heat and spread sauce over tortilla almost to the edges.  Top with cheese and any toppings you may have along with fresh basil if you have it or dried oregano or Italian herbs.   Place in oven.  





Cook until cheese melts and tortilla is golden and crispy.


 My mozzarella stick was low-fat so it didn't melt as much 
as I would have hoped!

  4. How did it taste? Yes, we have to work with what we can get at the store and what we have. Too much trouble to run to the store for one thing like we used to.

    1. It was quite good. The pizza sauce was some I had made myself and had frozen. The tortilla got nice and crispy although low fat cheese just doesn't melt as well as the full fat variety!
