Parmesan Halibut Steak #Recipe by Maya Corrigan #giveaway

In early spring I start looking in my supermarket for my favorite fish, fresh Alaskan halibut. If you like fish and aren't familiar with Alaskan halibut, give it a try. This recipe is an easy way to prepare halibut or any other firm fish, including swordfish, mahi mahi, or grouper.

I never cared for fish when I was growing up, but now with many more types of fish available, I eat it a couple of times a week. Alaskan halibut is my favorite. And, if you eat fish during Lent, it's plentiful at the perfect time.

Ingredients

¼ cup grated Parmesan cheese
2 tablespoon flour
4 halibut steaks (each 4 to 6 ounces), fresh or thawed
2 tablespoons olive oil
2 tablespoons fresh, chopped parsley




Mix the cheese and the flour together and spread the mixture out on a plate or wax paper. Using tongs, dip the halibut stakes in the mixture to coat them evenly on both sides.

Heat the olive oil in a large heavy pan until it is hot enough that a droplet of water sizzles in it. Sauté the fish steaks in the oil for approximately 10 minutes per inch of thickness, turning them halfway through so that both sides are golden brown. Cook until the fish flakes when a fork or knife is inserted in it. Take care not to overcook.

Remove the fish from the pan as soon as it’s done and transfer it to a platter.
Sprinkle with parsley and serve it with lemon wedges.

Serves 4.

  2. Thank you for sharing the recipe. I will use this for my husband who loves fish. So I am always looking for something a little different for him. Me personally, I dont like fish. LOL unless its fish sticks slathered with tarter sause. LOL quilting lady 2 at comcast dot net

  3. This recipe sounds so good we would use cod with it. My fav fish is dungeness crab I lived in SF area for 49 years and loved crab and then married an Iowan and moved to Iowa and you can't find that kind of crab out here so everyones fav is either pike or cod especially those that don;t eat meat during lent on Fridays so a lot of restaurants offer specials on the fish during that time . Have lived in eastern Iowa now for 18 years and want to get back to Ca as all my family lives there. peggy clayton

    1. Hi Peggy, This might not be the best recipe for cod because it's classified as a tender fish, not a firm one. It might flake apart in the pan when you try to turn it over.

  6. I definitely need to try this recipe. We had halibut regularly when I was growing up, but the last time I made it at home I didn't care for it. So need to do a little research and experiment with recipes to see what I like. Thanks for the giveaway.

  8. There are three types of clam chowder: Manhattan (red), New England (white with milk), and Rhode Island.
    I made RI style fish chowder for dinner yesterday: cod fish, swordfish (both frozen, then thawed), onions, celery, thyme, and broth (Better Than Bouillon lobster flavor). A semi-clear broth with lots of flavor. I made it Friday to allow the flavors to build.

    1. Hi Libby, Thanks for your comment. In the Chesapeake Bay area, another type of chowder is popular. It's like the RI broth style, but only with clams, not other fish. There's a recipe for it in the second book of my series--Scam Chowder.

  11. Yes, we love fish of all kinds. My favorite fish meal is red snapper stuffed with crab meat. We also love salmon, and any sort of fish or seafood, really. If you like simple recipes, top fish fillets with either pesto sauce or salsa and bake the fish until it is opaque and flakes with a fork.

  20. My family enjoy having fish as a meal. Most of the time due to cost factor we choose tilapia but if we can afford Lake Erie perch or walleye that is our second choice. When we have a chance we also purchase some shrimp. robeader53(at)yahoo(dot)com

  23. We eat a lot of fish. We love everything from baked cod, fried catfish to salmon. Can't think of a way we don't like it cooked or a fish we don't like.

  25. I do like fish but am a bit spoiled. Grew up on fresh caught lake fish in Wisconsin. Then lived on the east coast of Florida for 5 years. Got pretty spoiled. This looks good. Will have to see if they sell any of these types of fish in out Central Texas grocery store. gayleboyce@gmail.com
