Oops! #Feta Fries rerun #Giveaway! by Denise Swanson

To everyone who visited our blog today expecting our usual fabulous Sunday guest, I apologize. Life got in the way and I didn't realize it was my turn to invite someone to be my guest here in the Mystery Lovers' Kitchen.

Sadly, it was also too late for me to make something and share my recipe with you so please pardon this rerun of one of my all time favorite recipes. Feta Fries!

Every once in a while I just crave French fries, but with my HIT—Healthy, Inexpensive, Tasty—philosophy of eating, I try to resist. Then I ran across this recipe and once I tweaked it to our tastes, my husband and I can enjoy fries guilt free. I prep all the ingredients in advance so I can assemble quickly while the fries are still hot.



Ingredients

Cooking spray
2 large, but long and skinny Yukon Gold or russet potatoes, scrubbed and dried
1 tablespoon olive oil
2 teaspoons lemon zest
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon paprika
1/4 teaspoon black pepper
1/4 teaspoon parsley
1/4 teaspoon oregano
 Crumbled feta cheese
Greek yogurt


1 lb. chicken breast seasoned and grilled, then shredded













Preheat oven to 450F. 
Cut each potato lengthwise into 1/4-inch-thick slices; cut each slice into 1/4-inch fries. Toss the potatoes and oil in a large bowl. Season with zest, dried oregano, salt, garlic powder, onion powder, paprika, parsley, oregano, and pepper. Toss to coat.
Spread potatoes on a baking sheet coated with cooking spray and bake 10 minutes. Flip fries, and bake until crisp and brown, another 15 minutes.



Top fries with chicken. Sprinkle Greek yogurt and feta cheese over top.
