For my amateur sleuth, Marley McKinney,
one of the best parts of owning a pancake house is getting to test the recipes
created by the head chef, Ivan Kaminski. Ivan might be a burly, intimidating
man with a near-permanent scowl, but he has a heart of gold and he’s a wizard
in the kitchen. Ivan’s apple cinnamon scones with maple glaze are one of
Marley’s favorite treats to enjoy for breakfast or for a quick snack. I hope
you’ll enjoy them too!
APPLE CINNAMON SCONES WITH MAPLE GLAZE
Scones
2
cups all-purpose flour
1/3
cup sugar
1
tablespoon baking powder
2
teaspoons cinnamon
6
tablespoons unsalted butter
1
cup apples, chopped (I use Granny Smith)
1
egg
1
cup cream
1
teaspoon vanilla
Preheat
oven to 400°F.
Peel,
core, and chop the apple.
In
a large bowl, mix together the flour, sugar, baking powder, and cinnamon. Cut
the butter into small pieces and cut it into the dry ingredients with a pastry
cutter or fork until it resembles coarse oatmeal. Mix in the chopped apple.
In
a separate bowl, whisk together the egg, cream, and vanilla. Stir into dry
ingredients. If the dough is too dry, add some cream or milk, just a little bit
at a time, until you can form the dough into a ball.
Line
a baking sheet with parchment paper. Place the dough on a lightly floured surface.
Knead lightly, about 8 to 10 times. Form dough into a ball and place on the
baking sheet. Flatten the ball into a disc approximately 1 inch thick. Cut into
8 pieces but do not separate the pieces.
Bake
at 400°F for 18-20 minutes, until golden brown.
Maple
Glaze

tablespoons pure maple syrup
½
cup icing sugar
2
teaspoons cream
In
a small bowl, mix together glaze ingredients until smooth. Once the scones have
cooled, drizzle with glaze and serve.
