#Lemony Greek Chicken Noodle Soup by @DeniseSwanson


Soup is a great way to warm up as winter rages on. Here in the Midwest, we often have cold weather from October until the end of March so soup is a go-to meal for us.

This 20-minute dish provides lots of protein without lots of calories. To ensure this comforting soup’s velvety texture, whisk a little of the hot broth into the eggs before adding them to the pot; it cooks them gently and prevents curdling.






1 tablespoon olive oil
3/4 cup cubed carrot
1/2 cup chopped onion
2 tsp minced  garlic
1/2 tsp crushed red pepper
6 cups chicken stock
1/2 cup uncooked noodles(I use low carb)
3 eggs(I use egg substitute)
1/4 cup lemon juice
3 cups shredded seasoned and grilled chicken
3 cups baby spinach
1 1/4 tsp salt
1/2 tsp black pepper
 Dill weed



Heat oil in a Dutch oven over medium-high. Add carrot and onion. Cook, stirring often, until vegetables are softened. Approximately 3 to 4 minutes. Add garlic and crushed red pepper. Cook, stirring constantly for 1 minute.







Add stock to Dutch oven; increase heat to high, and bring stock to a boil. Break spaghetti into thirds and add to pot. Cook uncovered, until pasta is al dente. Approximately 6 minutes.








Meanwhile, whisk together eggs and lemon juice in a medium bowl until frothy. Once pasta has cooked 6 minutes, carefully remove 1 cup boiling stock from Dutch oven. Gradually add hot stock to egg–lemon juice mixture, whisking constantly to temper the eggs, about 1 minute. Pour egg mixture back into Dutch oven, and stir to combine.

Reduce heat to medium-low then stir in chicken, spinach, salt, and pepper. Cook, stirring constantly, until spinach wilts.










Serve in bowls and sprinkle with dill.

     Even though Lexie doesn’t believe the nonsense about her being the Ravenscraft Shield, she does believe her father was murdered—a father she never knew existed, and she investigates his death.
     Too bad, whoever killed her father, now wants Lexie dead as well.
