Sweet Potato Rounds for #Halloween + book #giveaway from Maya Corrigan

While I’ve been a guest a few times on Mystery Lovers’ Kitchen, this is my first posting as a Kitchen member, and I’m lucky it falls during the Halloween season. I’m sharing a recipe from my Halloween-themed new release, Crypt Suzette, the sixth book of my Five-Ingredient Mysteries series. The recipes in each book of the series have just five ingredients and are quick to make. Sweet potato rounds with goat cheese, cranberries, and nuts make a healthy autumn appetizer for a party or a side dish for dinner. 

In Crypt Suzette, cafe manager Val serves these sweet potatoes rounds at a gathering of would-be writers, the Fictionistas, as they discuss the death of one of their members. 

Ingredients

A large elongated sweet potato, cut into ¼ inch rounds, about 2 inches in diameter or smaller
1 tablespoon olive oil
4 ounces goat cheese at room temperature
½ cup dried cranberries
½ cup chopped walnuts or pecans



Spread the olive oil on a rimmed baking sheet. Lay the rounds on the sheet in a single layer, and then flip them so both sides are oiled.



Put the pan on the middle rack in the oven and bake for 8 minutes. Flip the rounds and bake for another 5 minutes or until the potatoes are soft. 



Combine the nuts and dried cranberries.



Remove the rounds from the oven, top them with goat cheese and sprinkle with the cranberry-and-nut mixture.


Serve warm or at room temperature as an appetizer or a side dish. 



Yield: Serves 4 (may vary depending on the size of the potato)

The participants include the Fictionistas, a creative writing group started by the secretive Suzette, who rents a room in the house Val shares with her grandfather. When Suzette is found dead of an apparent accident, Val and Granddad suspect foul play. So do Suzette’s fellow Fictionistas, who accuse each other of murder. Did one of them kill her or was her death rooted in the past she’d tried to escape? As Val tries to answer that question, she risks becoming the next “accident” victim.

  8. Hi Maya, I crave the old fashioned candy peanut butter kisses(the peanut butter taffy,that has a tiny drop of peanut butter in the middle),they are wrapped in either black or orange paper. Your sweet potato rounds look delicious,I can't wait till I can bake some up.   27. That is an interesting looking recipe. Do you peel the sweet potatoes first? I don't crave anything in particular at Halloween but I do "sample" whatever candy we buy for trick or treat. Gotta make sure it's good!

  32. I like it all. Black jelly beans remind me of my grandma. She gave me bags of them because my mom liked the black ones so she assumed I did too (I had to learn to like them). Wasn't til I started school I found out jelly beans came in other colors too.

  33. I love this recipe. I don't really crave the Halloween sweets, but I love spiced wafers and ginger snaps this time of year, as well as spiced hot toddies, hot apple cider, and mulled wine. And I can't leave out tea with added ginger, cinnamon, clove, orange.

This recipe is another way to get our grandkids to eat vegi my son lives in Ca and I am always calling home trying to tell him what to make and how to hide the vegis, This one is perfect and fast since he just on Sat had another girl and this one likes to eat so he might not have a problem with her but it will be while before she eats and reads all of grandmas books when she comes here to Iowa..I have read crypt Suzette and that was so good would love to read another print book of yours as I am hooked , Peggy clayton ptclayton2 (at) aol.com

  52. I love Halloween because it's almost the only time you can find my favorite candy treat: the little square mini Snickers. Because they are so small they have a little more chocolate per bit that makes they extra yummy.
