While I’ve been a guest a few times on Mystery Lovers’ Kitchen, this is my first posting as a Kitchen member, and I’m lucky it falls during the Halloween season. I’m sharing a recipe from my Halloween-themed new release, Crypt Suzette, the sixth book of my Five-Ingredient Mysteries series. The recipes in each book of the series have just five ingredients and are quick to make. Sweet potato rounds with goat cheese, cranberries, and nuts make a healthy autumn appetizer for a party or a side dish for dinner. 

In Crypt Suzette, cafe manager Val serves these sweet potatoes rounds at a gathering of would-be writers, the Fictionistas, as they discuss the death of one of their members. 

Ingredients

A large elongated sweet potato, cut into ¼ inch rounds, about 2 inches in diameter or smaller

1 tablespoon olive oil

4 ounces goat cheese at room temperature

½ cup dried cranberries

½ cup chopped walnuts or pecans

Spread the olive oil on a rimmed baking sheet. Lay the rounds on the sheet in a single layer, and then flip them so both sides are oiled.

Put the pan on the middle rack in the oven and bake for 8 minutes. Flip the rounds and bake for another 5 minutes or until the potatoes are soft. 

Combine the nuts and dried cranberries.

Remove the rounds from the oven, top them with goat cheese and sprinkle with the cranberry-and-nut mixture.

Serve warm or at room temperature as an appetizer or a side dish. 

Yield: Serves 4 (may vary depending on the size of the potato)
