#Chicken Stir Fry with Bok Choy by @Denise Swanson


My husband and I love Chinese food, but we're trying to cut back on sodium and eliminate the MSG from our diets so we've been trying a lot of Asian inspired recipes at home. If your grocery store doesn’t carry baby bok choy you can substitute 1 lb. of chopped regular bok choy or even Napa cabbage. Serve this dish over rice noodles or steamed brown rice to soak up all the delicious sauce.

Ingredients


 1 pound chicken breast, cut into 1-inch  pieces
 3 tablespoons plus 1 tsp. cornstarch, divided
 1/4 cup canola oil, divided
 1/3 cup fresh orange juice
 2 tablespoons lower-sodium soy sauce
 2 tablespoons rice vinegar
 1 teaspoon honey
 1/2 teaspoon crushed red pepper
 2 tablespoons sesame oil, divided
 4 baby bok choy, trimmed and halved 
 1/4 cup water
 1/4 teaspoon salt
 1 1/2 tablespoons minced peeled fresh ginger
 3 large garlic cloves, minced
                                                                                    1 tablespoon sesame seeds, toasted




Sprinkle chicken with 3 tablespoons cornstarch. Heat 3 tablespoons canola oil in a large wok or nonstick skillet over high. Add chicken and cook until browned (about 8 minutes). Set aside and wipe wok clean.







Combine orange juice, soy sauce, vinegar, honey, red pepper, and remaining 1 teaspoon cornstarch, then set aside. 










Heat wok to medium then add 1 tablespoon sesame oil and half of bok choy; cook until browned. Remove from wok; repeat with remaining 1 tablespoon sesame oil and bok choy. Return all bok choy to wok. Reduce heat to low; add 1/4 cup water. Cover and cook until tender (About 2 minutes). Sprinkle with salt. Set aside.
Add ginger, garlic, and remaining 1 tablespoon canola oil to wok. Cook on medium 2 minutes. Add orange juice mixture and cook until thickened. 

Stir in chicken. 














Divide among 4 plates; sprinkle with sesame seeds, and serve with bok choy.

     Too bad, whoever killed her father, now wants Lexie dead as well.

  2. Love this recipe. So often Chinese style recipes include a lot of ingredients that I'm not likely to have on hand. I'll be trying this one!
