#Cajun Shrimp Pasta by @Denise Swanson

My husband and I enjoy Cajun flavors and this recipe is perfect for a meatless Friday during Lent. After tasting it, I think I’m also going to try it with tofu and chicken as the protein.

6 ounces linguine or fettuccine or spaghetti
 1 1/2 teaspoons Cajun seasoning
1 pound large shrimp, peeled and deveined
 2 tablespoons canola oil, divided

 1 cup chopped onion
1 cup chopped green bell pepper
 1/2 cup thinly sliced celery

1/2 teaspoon thyme
 1/4 teaspoon ground red pepper
 5 garlic cloves, minced
 3/4 teaspoon salt
 2 bay leaves
1 (14.5-ounce) can unsalted diced tomatoes, undrained
 1/2 cup half-and-half

Cook pasta according to package directions. Drain in a colander over a bowl, reserving 1/3 cup pasta cooking liquid.

Combine Cajun seasoning and shrimp in a medium bowl and toss to coat. It’s going to look like you don’t have enough seasoning, but trust me you don’t want to add more.

Heat a large skillet over medium-high heat.Pour 1 tablespoon oil into pan and swirl to coat. Add shrimp mixture to pan and cook 2 to 3 minutes or until shrimp are done. Remove shrimp mixture from pan.

Add remaining 1 tablespoon oil to pan and swirl. Add onion, bell pepper, celery, and thyme. Cook 5 minutes, stirring occasionally.

Add red pepper and garlic. Cook 3 minutes. Add reserved 1/3 cup cooking liquid, salt, bay leaves, and tomatoes and bring to a boil. Reduce heat and simmer 5 minutes. It should thicken slightly. Discard bay leaves.

Remove pan from heat, stir in shrimp, and pasta. Stir in half-and-half. Cook 1 minute over medium heat or until heated.

The chips are down in Scumble River

School psychologist Skye Denison-Boyd had hoped that her maternity leave would be at least a little relaxing, but when she and her husband, Wally, meet with the priest to discuss their newborn twins' christening, an explosion at the nearby bowling alley rocks the rectory. And although the business was closed at the time of the blast, there's a body inside.

As police chief, Wally is inevitably drawn into the investigation, which seems to indicate that foul play is afoot again in Scumble River, and Skye can't help but do a bit of her own sleuthing. But the clues come fast and furious, ranging from an odd new stranger in town to animosity toward the gambling machines that had recently been installed at the bowling alley, and Skye finds herself wondering if this could be the puzzle that stumps her for good.

New York Times bestselling author Denise Swanson has penned another hit for cozy fans with Die Me a River, the latest installment in her beloved Welcome Back to Scumble River mystery series.

  1. What is in Cajun seasoning?
Sounds like a shrimp jambalaya cousin.

  2. It's a mixture of various spices packaged under the name of Cajun seasoning. Sort of like a Mrs. Dash but with Cajun flavors.
