Chipotle Honey Chicken Tacos #Recipe @PegCochran

Who doesn't love tacos, right?  And the variations are endless--beef tacos, vegetarian tacos, fish tacos, etc.  When I found this recipe from the NY Times, I knew I had to try it.  Hubby gave it his highest praise--"don't lose that recipe."  He always says that although I don't know why since I'm not in the habit of losing recipes!  I also made a red cabbage/apple/carrot slaw to put on the tacos that was quick, easy and delicious.


1 ½ pounds boneless, skinless chicken thighs

3 tablespoons honey

1 teaspoon onion powder

1 teaspoon garlic powder

½ teaspoon ground cumin

1 teaspoon kosher salt or to taste

4 chipotles from a can of chipotles in adobo, finely chopped, plus 2 tablespoons adobo sauce

1 (15-ounce) can black beans, rinsed and drained

Juice of 1 lime 

Remove 4 chipotles from can and chop.





Add the chicken, honey, onion and garlic powders, cumin, salt and chipotle chiles and adobo sauce in a slow cooker. Cook for at least 3 hours and up to 5 hours on low. 



Remove chicken, and shred using two forks.  Return the chicken to the sauce. Stir in the black beans and lime juice. Cover and let the beans warm through, about 5 minutes. 

Cabbage Slaw

1 small bag of shredded red cabbage (or shred your own)
1 apple, grated
1 or 2 carrots grated
Ranch dressing
Cilantro paste

Proportions on the slaw aren't exact--eyeball it and make as much as you need adding more or less cabbage, apple and carrot.



Mix shredded ingredients and toss with ranch dressing.  Squeeze in a dollop of cilantro paste if desired.  



Serve with warm tortillas and cubed avocado if desired.

  1. Funny. I have a slow cooker, but I get impatient and usually cook in a Dutch oven on the stove top.
    Anyway, this sounds quite tasty.
    I like your slaw. Ranch dressing? I'm surprised.

    1. The ranch dressing was good! Added the creaminess you usually get by adding sour cream to a taco I'm sure you can make these stove top as well.
